Chef-driven New American restaurant delivers vibrant dining in Chicago‘s Gold Coast; debuting globally inspired savoury, sweet and cocktail menus March 21

Chicago, U.S.A., 2022-Mar-16 — /Travel PR News/ — Adorn Bar & Restaurant at Four Seasons Hotel Chicago celebrates its first anniversary, the growth of its stellar team, and the change of seasons by introducing new, expanded savoury, sweet, and cocktail menus for spring on March 21, 2022, and an elevated take on a happy hour menu – the “Social Hour.” Since Adorn’s opening, James Beard Award-winning Chef Jonathon Sawyer has been joined by Netflix Chocolatier Juan Gutierrez, and Diageo Top 15 US Bartender honoree, Mixologist Slava Borisov, among other strategic team additions.

Supporting the restaurant’s global vision, Adorn’s Live in the Lounge residency features recognized musician and DJ performances with local and international influences. Guests can enjoy a roster of varied musical style, from South American guitarists and veterans of the Chicago jazz scene to DJs who spin house, funk, and disco. Taken together, these artists produce a soundtrack that celebrates both the restaurant and city’s eclectic energy and musical history while providing a beat along which the personable and attentive team serve their guests.

Chefs and bartenders alike delight in table-side experiences presenting dishes and drinks, and sharing the inspiration they drew from and the stories behind each of their offerings. Sawyer and his team’s diverse backgrounds and travels colour the dishes they create that celebrate Midwestern ingredients as seen through a global lens.

The majority of the ingredients for the thoughtfully constructed dishes are sourced from farmers, ranchers, and other purveyors located within 200 miles (320 kilometres) of the restaurant. Spring dishes new to the menu include:

  • The playful Beet and Poppy Seed Gnochetti, which tricks the tastebuds – the gnochetti are vibrantly dyed by the beets so each piece is indiscernible from the next and every bite consists of different textures and flavours. Inspired by Chef Sawyer’s travels to northern Italy, it offers the region’s bright combination of flavours with grappa gnochetti, beets, gorgonzola dolce, walnuts, chervil, and lemon.
  • Lamb Shoulder “Paella – this gluten-free dish takes the classic Mediterranean spring combination of lamb and artichokes and builds on it, with a perfectly crispy socarrat that holds a soft and fluffy inside, made in a timbal, topped with artichoke and Jerusalem artichoke soubise, and fatty lamb shoulder.
  • Fred Flintstone Beef “Short Rib” – this mammoth bone-in cut is first smoked for three hours with koji, coriander, peppercorn, raw garlic and bay leaf pastrami spice rub and sous vide for 48 hours for a smoky cured tender bite. Accompanied with marbled twice-cooked new potatoes, jacquard, brined, confited, and then finished in beef suet for rich pickle and beef flavour.

Adorn’s 2022 Jean Banchet Award-nominated pastry program features Executive Pastry Chef Juan Gutierrez’s carefully crafted desserts, each focusing on flavours and techniques drawn from a different country and reimagined.

  • Open Sesame with sesame ball, black sesame praline, and rice ice cream
  • PB & Jam It with peanut mousse, roasted grape sorbet, and toasted bread ice cream
  • Pistacia Vera with semolina cake, pistachio ice cream, kataifi

Alongside the chefs’ globally-inspired cuisine, diners can delight in Adorn Mixologist Slava Borisov’s inventive new menu of craft cocktails. Slava’s eclectic lineup of completely original libations encompass four sections on the menu: Adornables (globally-inspired flavours), Off the Deep End (out-of-the-box cocktails), (No So) Classics (riffs on classic cocktails), and Proof Free (all the fun without the booze).

Standout beverages include:

  • Pop Star Martini a classic Belvedere vodka, St-Germain, passion fruit, vanilla martini that gives a little extra “pop” with interactive passion fruit pearls and Lanson champagne – a “(Not So) Classic”
  • Long Strange Trip named after American rock band The Grateful Dead, Borisov’s mushroom-centric cocktail boasts an unexpected symphony with mushroom cordial, cranberry, habanero and egg white give this libation its psychedelic twist – an “Off the Deep End”
  • Triple Espresso Martini with three forms of espresso in a trifecta of flavour: cold brew infused Ketel One vodka, French pressed turbinado syrup and Robusto espresso – a “(Not So) Classic”
  • Spanish T&G with Seedlip Spice, Madagascar vanilla, verjus, and tonic – a “Proof Free”

In addition to new dinner menus and cocktails, guests are invited to enjoy Adorn’s recently launched Social Hour, the restaurant’s whimsical spin on happy hour featuring a collection of globally-inspired small plates. Perfect after a busy day of shopping on Magnificent Mile or for business meetings, Social Hour offers a sophisticated respite to unwind high above the bustle of Michigan Avenue. Set among the high-energy and high-style ambiance of Adorn, guests can enjoy international fare priced from USD 9 to 18 per dish, alongside Adorn’s lineup of carefully crafted cocktails, regional craft brews, and wines by the glass.

Social Hour menu items include:

  • Salt Friend Hominy with pickled red onion and cilantro
  • Yellowtail Tartare with Japanese citrus and lotus chips
  • Wagyu Potstickers with shumai sauce, ginger, and scallion
  • Chicken Fried Lobster with green papaya slaw and sun-dried pepper aioli

Dinner is offered daily from 6:00 to 10:00 pm. Social Hour is available at Adorn’s bar or in the dining room Monday-Friday from 4:00 to 6:00 pm. and Saturday-Sunday from 1:00 to 6:00 pm.
