Executive Sous Chef Jesse Hansen takes guests’ palates through an array of flavours during this three-course dinner, inspired by and paired with Alaskan Brewing Company beers.
“Like a fine wine, a great beer can make a world of difference in your culinary experience,” says Chef Hansen. “Beer dinners are a great way to not only satisfy your palate, but gather all of your friends to experience something different.”
The dinner begins with a citrus-cured Alaskan salmon, accompanied by fresh frisee topped with sweet pickled watermelon radish, or braised pork belly enhanced with a chili verde sauce; both are paired with the Freeride APA. The main course, featuring the Alaskan Amber, is a choice between the California rack of lamb, complemented with summer bean salad and lamb shank crisps, or a delectable seafood stew comprised of jumbo shrimp, sweet crab and white bass. To finish off dinner, the Alaskan Smoked Porter is served with either a warm porter-molasses cake topped with homemade vanilla ice cream and dried fruit, or coffee and chocolate malt custard, crowned with cinnamon-bacon-caramel corn.
