Quattro’s Executive Chef Marco Fossati showcases his Italian roots by bringing Festa di San Marco to life at Four Seasons Hotel Silicon Valley

Palo Alto, Silicon Valley, 2015-4-9 — /Travel PR News/ — In Italy, the Festa di San Marco is a holiday that combines three traditions into one giant party; St. Mark’s Day, Liberation Day, and the Festival of the Blooming Rose.  It’s only fitting that Quattro’s very own Executive Chef, Marco Fossati showcases his Italian roots by bringing this party to life at Four Seasons Hotel Silicon Valley.  Throughout the evening, the Chef plans to visit each and every table to deliver the “love” of Italy himself.

Scheduled for Saturday, April 25, 2015 at 5:30 pm, the six-course dinner – part of the restaurant’s popular monthly event series – will be themed around cheese, with each course showcasing a unique variety ranging from robiola tre latti to smoked fromage blanc.  Some of the highlights of the menu include risi e bisi, a risotto with peas and pancetta commonly made during this holiday, plus roasted squab and braised red abalone.

“Growing up in Italy, my family always celebrated with an indulgent feast,” says Fossati.  “I want to bring traditional favourites to Quattro and pay homage to some of my grandparents’ classic dishes.”

The six-course feast is USD 150 per person from 5:30 to 9:30 pm and is limited to only the first 50 guests.  Reservations can be made by calling 650 566 1200 or booking online.

Hailing from Genoa, Italy, Marco Fossati is an imaginative chef with more than 28 years’ experience cooking in kitchens around the world.  With each stop, his mentors inspired him to build upon his Italian heritage and have seasoned his culinary philosophy with international elegance.  Although his knowledge and skill are impressive, it’s his passion that captivates.  Fossati began cooking Sunday dinners at a young age alongside his grandparents.
