PABU at Four Seasons Hotel Baltimore Introduces Sake 101 Classes

Tuesday Sake Dinners follow Saturday Sake 101 classes

Baltimore, U.S.A. 2012-08-08 — /travelprnews.com/ — WHAT: A new series of hour-long, informative classes dedicated to sake at PABU. Led by Tiffany Soto and PABU’s team of in-house Sake Sommeliers, each Sake 101 class is an interactive tasting of five sakes that will explore various flavour profiles and illustrate the diversity within the genre. With every sip, guests will learn about the libation’s history and brewing process, the meanings behind different grade designations, and how production regions affect taste. Conversation will also delve into the benefits of drinking sake (including its low calorie count) and tips for easily navigating a sake menu in the future.

For those keen to test their newly-acquiredsSake knowledge, PABU is also offering a special five-course Sake Dinner the Tuesday following each class. The menu, artfully constructed by Executive Chef Jonah Kim, will change monthly and feature signature dishes from the restaurant along with a special sake pairing for each course. Menu items may include:

 

  • Izakaya Appetizer Tasting (lotus root, jako, goma-ae) and Happy Spoon (oyster, uni, ikura and ponzu crème frâiche)
  • Tasting of Chicken, Japanese Style: PABU wings Nagoya style;robata (muneniku – chicken breast, shiso, umeboshi); kokoro (sake-cured chicken heart also known as “the best part of the chicken”);tsukune (chicken meatball with jidori egg yolk); and negima (chicken thigh with scallion)
  • Unagidon (broiled fresh water eel, foie gras, sesame seeds)
  • Chef’s Choice Sushi Plate (six-piece experience, carefully selected to showcase the best PABU has to offer)
  • Dessert Omakase (tasting of honey panna cotta with yuzu gelee, tapioca; mochi-miso caramel ice cream with white soy caramel; green tea sorbet featuring lemon grass, melon, pineapple and white chocolate bar featuring crunchy arare, whiskey)

WHEN: Sake 101 classes take place on the second Saturday of every month through October 2012 from 4:30 to 5:30 pm. The next event will take place on August 11, 2012.

Sake Dinners take place on the Tuesday following each Sake 101 class and begin at 6:00 pm.

Sake 101 classes are USD 25.00 per person. Seats for the Tuesday Sake Dinners are USD 75.00 per person. Guests who book both will receive a special packaged price of USD 90.00 per person. Pricing is exclusive of tax and gratuities.
