Four Seasons Hotel Guangzhou Unveils Its Sky-High Seafood Restaurant on the 100th Floor

Catch features fresh seafood from around the world

2012-11-23 — /travelprnews.com/ — On the 100th floor and crowning International Finance Center (IFC) Guangzhou, Catch at Four Seasons Hotel Guangzhou is now open, marking the full opening of the Hotel’s six dining and entertainment venues. As the highest hotel restaurant in Guangzhou, Catch specializes in serving western style seafood cuisines and samples wines and Champagne from the world over. Its star-inspired space, crafted by the internationally renowned interior designer Steve Leung, redefines the see-and-be-seen life in the city.

Catch’s Head Chef Paddy Chan has created a menu of exquisite preparations of the freshest internationally sourced seafood, including Norwegian salmon, Australian rock oysters and Australian lobster, as well as choice cuts of meat including grain-fed black angus beef steak. Signature dishes include steamed lobster with foie gras mousse and fruit carpaccio with port wine reduction; crispy skinned ocean trout served with fennel confit, crispy shallots, and white balsamic tomatoes; and the Catch chilled shellfish platter with a collection of the freshest available oysters, clams, mussels, and crab.

A kitchen veteran, Chef Paddy joined Four Seasons Hotel Guangzhou in February 2012. Through his 15 years of culinary experience, he has worked with Four Seasons hotels and resorts in Langkawi, Hampshire, Boston, Dublin and Singapore.

“Catch is one of its kind; instead of following the norm of a cuisine like French or Italian, we focus on the most popular seafood products and take inspiration from all different cuisines,” says Chef Paddy, a Malaysian native from the heaven of seafood. “In addition to the freshest local seafood, we also have seafood from all over the world freshly air flown to our kitchen three times a week, to ensure variety and freshness. Every product from Catch is destined to be state of the art to your eyes and palate.”

Wine lovers should not miss Catch’s beverage menu, which lists more than 200 choices of wine and Champagne, including 50 recognized as the sommelier’s recommendations. Catch opens daily from 6:00 to 10:00 pm.

Also of note, Catch is the only space within Four Seasons Hotel Guangzhou that is specially assigned to the Hong Kong-born award-winning interior designer Steve Leung. Steve’s works reflect a strong and unique character of contemporary-style, with skillful adoption of Asian culture and arts. Steve has won more than 80 design and corporate awards in the Asia Pacific region and worldwide, including the Best Interior Designers Worldwide award in the Andrew Martin International Awards – the Oscars of design – on ten separate occasions.

“If Four Seasons Hotel Guangzhou is regarded as the crown of IFC tower, Catch is the most eye-catching jewel on the crown,” says Steve. “Up in the sky of over 400 meters high, starry night is my inspiration; I captured its enchantment through adoption of textures and materials. With the impressive crystal elements and stylish décor, Catch provides diners with a graceful and mood-filled environment for exclusive dining experience.”

The 102-seat dining area of the restaurant has been divided into two parts, complete with a private dining room. The designer tactfully created a semi-private dining area by placing two arc-shaped wine cellars in the main dining area, while the exquisite wine collection is turned into a contemporary backdrop that diners can admire. Adjoining the wine cellar is another private dining nook with loveseat seating. Diners can enjoy the breathtaking city view through the floor-to-ceiling glass window while dining in the lap of romance. Echoing with the overall theme, the second dining area located on the opposite side of the entrance is designed as a seafood bar, with an oval bar counter and open kitchen at the centre area allowing more interactions between guests and chefs.

The new Four Seasons Hotel Guangzhou opened its doors on July 23, 2012. Be it Italian-inspired flavours at Caffe Mondo, traditional Japanese cuisine presented by a Michelin-starred chef at Kumoi, authentic Cantonese delicacies at Yu Yue Heen, light fare at The Atrium, or Champagne and cocktails at Tian Bar, the Hotel’s six dining and entertainment venues are the perfect locations for epicureans and connoisseurs.
