Born and raised in Waterloo, Belgium, Hasbroeck discovered his love for cooking and hospitality from his childhood, when he would help his grandmother in the kitchen. “Her food was simply delicious and full of beautifully paired flavours. She was cooking from the heart, with love as the main ingredient. This is why I was ‘hungry’ to become a chef,” says Hasbroeck.
His career took him to different corners of the world. With the last 23 years spent criss-crossing the globe, every one of the destinations he traversed opened up exciting new explorations into texture, flavour and history. His journey has also led him to work under and alongside inspiring mentors with whom he explored different cultures through their food. Hasbroeck’s extensive portfolio, which he is extremely proud of, is star-studded with internationally acclaimed and Michelin-star restaurants, including the likes of Vistamar in Monaco, Il Cortile in Paris, Le Chalet de la Foret in Brussels and Jean-Georges Vongerichten in Dubai.
“Being a chef has never been a job for me, but purely a passion,” says Hasbroeck. “My favourite part is working in a team, where everyone contributes their character, individuality, pride and history into every single dish. There is no limit to the creation and combination of worldwide flavours and diverse techniques.”
With talent in abundance and heaps of ability, Hasbroeck thrives in fast-paced environments, catering daily to the highest of expectations across multiple restaurants. Hasbroeck brings an impressive resume and unwavering ambitions to Four Seasons Resort Dubai at Jumeirah Beach. With Executive Chef Gilles Arzur, he will oversee the resort’s restaurants, bars, room service, poolside dining and banqueting.
