Chef to oversee famed kitchens of New York institution’s dining outlets

NEW YORK, 2013-08-12— /travelprnews.com/ — The Waldorf Astoria New York is pleased to announce the appointment of Matthew Schindler as the hotel’s chef de cuisine. Schindler brings more than 20 years of culinary experience in a variety of venues and kitchens to the Waldorf Astoria’s famed Peacock Alley, Bull & Bear Steakhouse, Oscar’s Brasserie and room service.

Among his many culinary talents, Schindler is an accomplished butcher, saucier and fishmonger.  Aside from overseeing the Waldorf Astoria’s legendary kitchens, Matthew will be instrumental in finding creative ways to utilize the fresh ingredients from the hotel’s new rooftop garden in daily specials and new menu items.  As he prefers to bring out the natural flavors of simple ingredients, Schindler will use the seasonal ingredients in the garden to enhance the Waldorf Astoria’s authentic culinary offerings.

Schindler joins the Waldorf after spending seven years with Four Seasons Hotels and Resorts, most recently as the sous chef at the Four Seasons Hotel in Hampshire, UK.  Career highlights thus far include two years as sous chef at the Five Star Five Diamond Four Seasons Hotel in New York City, working as a member of the former L’Atelier Joël Robuchon restaurant opening team that was awarded two Michelin stars and sous chef at Fandango Restaurant in Seattle.  In addition, Schindler spent time as a culinary instructor for a children’s cooking course in Seattle and competes in triathlons in his free time.
