Done well, it’s art,” says Chef Mauro.
Guests and patrons can begin the dining experience with a selection of cheeses and salami, house-baked breads alongside an olive oil tasting or other starters including warm burrata in a prosciutto broth; or octopus with beets, pancetta and salted almonds. The menu continues to entice with house-made stone fired pizzette, pastas including tagliatelle with braised lamb ragout; or gnocchi with figs and gorgonzola piccante; and risottos accented by royal trumpet mushrooms or butter poached Maine lobster. Locally sourced seafood selections including pumpkin swordfish and branzino are also featured alongside other mains such as angus short ribs, prime teres major, lamb chop, or chicken with a butternut quash puree, artichokes, fennel and garlic jus.
Using artisanal Italian spirits and liqueurs and locally sourced, freshly-squeezed juices and products, the Bar at Jové sets the scene for Palm Beach cocktail culture whether meeting for an after-work glass of wine from the list of more than 100 bottles, relaxing with a pre-dinner aperitivo or winding down over a nightcap. “The philosophy behind a great drink is no different than the one in our kitchen: well-balanced and rooted in the classics but with a sense of fun and creativity,” says Jové General Manager Karma Tsepal.
