Envisioned as an ode to a legendary world traveler, each cocktail imagines a “lost” recipe and the story behind it

Inspired by fictional world traveller Sir James Hendricks and the interesting personalities he might have encountered during his adventures, the menu itself depicts treasured recipes scribbled in his weathered moleskin. Timothy Rosete, Head Mixologist at Four Seasons Resort Dubai and avid cocktail historian, imagined Sir Hendricks’ recipes and explored ways of turning classics into new, fresh cocktails with a contemporary twist.
The new menu offers an exciting selection of sophisticated creations, boasting high quality ingredients and craftily paired spirits. Experimenting with in-house blended local elements, including spices and botanicals, the bar team envisioned a menu in which “less is more.” Clean colours, detailed garnishes, alchemies and chic appearance are fundamentals that make the artisanal cocktails unique at Hendricks Bar.
Aiming to surprise and create wonder, the new menu tells stories of Sir James’ escapades with some of history’s most prominent figures.

A Selection of Storied Cocktails
Who is Sir James Hendricks? A legendary character, rumoured to be either a time-traveller or an immortal, for he has been graced by adventures with the world’s most prominent figures across generations. His panache for mixology is second to none, and known by those who are deeply immersed in cocktail history. His precious works have been passed on to students faithful to the liquid arts, to be seen only by those who prove their passion.
When Sir Hendricks met Abraham Lincoln, Abraham shared: “It has been my experience that folks who have no vices have very little virtues.” Influenced by the inspirational Abraham Lincoln and his momentous achievements, the team at Hendricks has created a visionary cocktail.
What is special about this cocktail? Inspired by Abraham Lincoln’s keenness for change, this cocktail is characterized by using bourbon and rye infused with coffee pucks collected after each espresso is made at the Resort. 50/50 bourbon rye infused with spent coffee, port wine, chocolate liqueur, bitters and sweet vermouth are mixed to create a remarkable cocktail that transports sippers back in time. The method of execution, which includes a touch of sustainability by reducing coffee waste, reflects the bar’s commitment to reduce its environmental footprint.
When Sir Hendricks met Coco Chanel, he fell in love with her and offered her a glass of Champagne. Once he confessed his admiration, she told him, “I only drink Champagne on two occasions. When I am in love and when I am not.’’ Sir James had to then guess to which of the two Coco had raised her glass.
What is special about this cocktail? Drawing inspiration from Coco Chanel’s love for all things fancy, this cocktail showcases the signature, premium house gins at Hendricks Bar. This cocktail contains cucumber and basil house gin, elderflower tonic, citrus and Champagne. Fun fact: The cocktail’s scent share the same notes as Chanel’s Coco Mademoiselle perfume.
As Timothy Rosete often says, “A good night ends with the words, let’s grab another drink.” Timothy brings a sense of history and cultural influences to the menu, particularly to Sir James’ favourite drink.
What is special about this cocktail? This particular cocktail embraces a twist on James’ classic favourite from his Malaysian travels – The Crimson Sunbird. Tim Rosete, who migrated to Singapore at the age of three, adds his Singaporean twist, named after his hometown’s national bird. Spiced pineapple syrup is the main ingredient, with pineapple being one of Singapore’s favourite fruits and spices representing Dubai’s food landscape. Rum, Campari, citrus and egg white come together to complete this masterpiece.
Inspired by Sir James’ favourite joke by comedian Rodney Dangerfield, “My doctor told me to watch my drinking. So now I drink in front of a mirror,” Timothy has created a Negroni, as clear as glass.
What is special about this cocktail? Just like Dangerfield stitched together his sarcastic jokes into a stand-up comedy routine, this cocktail is especially curated by weaving five different vermouths into a house blend along with Campari. “Washed” with clarified milk punch and citric acid, the Golden Mirror cocktail leaves a creamy but clear aftertaste, as crystalline and insightful as a mirror.
