Four Seasons Hotel Dublin Puts Its Soul Into New Lunch Menu

Launching this month, the farm-to-table Lunch Menu only features items that are in season and can therefore be served as freshly as possible.

Discover new starters including warm allotment vegetable salad, leek and potato soup with crisp smoked bacon, oatmeal and raw sugar bruleed chicken liver pate with Irish gooseberry preserve, and lightly smoked and cured salmon with turnip remoulade and toasted sour dough.

Try the new main dishes, such as roasted John Dory fillet, which is available and plentiful from September through to November and is delivered to the kitchen each morning. It is accompanied by tiny asparagus, couscous with stonefruit, apricots and cardamom, garnished with fresh samphire grass for an extraordinary taste.

The meat is all sourced from local farmers of the highest quality. The Castlemaine grilled rump of lamb is served medium with natural braising juices and a selection of the local in-season vegetables. Dry aged caramelized sirloin of beef is 5-6 ounces of unrivalled tenderness, traditionally matured on the bone for 26 days and served with black cabbage, red wine jus and slow cooked shallots. The delicious crisp grilled chicken with Dun Aengus rub featuring the tasty house rub is truly mouth watering alongside parsley and barley side and raw vegetable salad.
