PABU at Four Seasons Hotel Baltimore Introduces New Satori Menu

Located along Baltimore’s Inner Harbor, the new Japanese izakaya offers a special tasting menu.

Baltimore, U.S.A. 2012-09-21 — /travelprnews.com/ — PABU, the Japanese izakaya located along Baltimore’s Inner Harbor adjacent to Four Seasons Hotel Baltimore from chefs Michael Mina and Ken Tominaga, presents a modern take on traditional izakayastyle dining featuring small plates, grilled items from the exposed robata grill, as well as sushi and sashimi. Designed by Frost Tsuji Architects, PABU features bamboo ceilings, specially commissioned art pieces and beautifully crafted solid wood tabletops, benches and chairs. The restaurant, with its warm, neutral, earth tones, serves dinner only and offers guests a large beverage selection, including an impressive sake repertoire of more than 100 different sakes present by master sake sommeliers, eclectic beers, wine and a whiskey-inspired cocktail list.

While PABU opened this past May, Executive Chef Jonah Kim is now introducing a new Satori menu to provide guests with a way to navigate the menu and experience the restaurant as Chefs Michael Mina and Ken Tominaga envisioned it. Traditional izakayas are in essence pubs, but PABU aims update that concept. The restaurant still offers a sake program with more than 100 varietals curated by master sake sommelier Tiffany Soto, but it strives to make food a focus as well, as seen with the restaurant’s special Satori menu. This tasting menu was designed to aid first-time guests in navigating the PABU menu.

Satori means “understanding” in Japanese and this tasting experience pulls signature dishes from each of the menu sections so guests can explore and discover what they like best. The goal is to highlight some of the chefs’ favourites ; approachable options that showcase the quality of PABU’s ingredients and their support of local farms, so when diners return , they have a base from which to be even more adventurous.
