More original and more delicious than ever, the now famous Galette des Reines returns to Le Meurice.
2012-12-11 — /travelprnews.com/ — For 2013, the pastry brigade has imagined an authentic galette in Le Meurice’s signature colours, in the shape of a fresh almond as a reminder of the origins and true taste of this traditional cake. Glazed pastry sprinkled with leaves gilded with fine gold is filled with almond paste and almond cream, while roasted almonds add even more crispness and flavour.
The almond is rich in symbols. It brings the promise of prosperity for all those who bite into it. A symbol of immortality, the almond represents the true value and essence of all things: we must break the husk to reach the delicious fruit just as we must look beyond the surface of a person to see how wonderful they are.
Like the almond itself, the 2013 Galette des Reines is a delight to discover: bite into the crisp pastry to indulge in the soft, light and delicately crunchy heart.
