Internationally acclaimed Chef Mauro Colagreco to open his first US restaurant at Four Seasons Resort Palm Beach

Welcoming in a new era of unparalleled experiences for guests and locals this November

Palm Beach, U.S.A., 2018-Oct-13 — /Travel PR News/ — The newly renovated Four Seasons Resort Palm Beach continues its legacy as Palm Beach Island’s only Five-Star, Five-Diamond resort by welcoming Florie’s, a restaurant in partnership with internationally acclaimed Argentine-Italian Chef Mauro Colagreco. Colagreco’s flagship Mirazur in Menton, France holds two Michelin stars and is ranked third on The World’s 50 Best Restaurants 2018 list.

The restaurant’s name is a nod to Florida, Colagreco’s passion for gardening and Florie’s earth conscious offerings inspired by nature, incorporating florals and herbs native to Palm Beach and the French Riviera. Chef de Cuisine Florenzo Barbieri will help lead Florie’s kitchen under Colagreco’s close mentorship.

Nadim Ashi, founder of Fort Partners and owner of Four Seasons Resort Palm Beach, tapped Colagreco to bring his vision for dining at the Resort to life, rivalling some of the best culinary destinations in the world.

Culinary Offerings

As a chef without borders, Florie’s menus are inspired by Colagreco’s Mediterranean spirit, multicultural background and international vision and are centred on live fire cooking with a stone hearth oven, yakitori grill and “à la broche,” a spit-roasting technique. His instinctive cuisine is rooted in using the freshest, hand-picked ingredients transformed as little as possible and prepared in natural presentations.

For dinner, a selection of pastas, wood-fired pizzas and appetisers such as hamachi with citrus and macadamia milk are available to start. Plates, including aubergine and mozzarella with parmesan cream, are touched by fire in the hearth oven, while the yakitori grill yields boldly flavoured items such as wagyu beef with grilled red peppers. À la broche dishes such as farm-raised truffled chicken with albufera sauce, potatoes, chives and shallots round out the menu. The lunch menu highlights many of the dinner offerings with additional options.

Beverage Program

Florie’s Bar features seasonally changing, garden-driven cocktails and aperitifs. Selections celebrate Florida’s abundance of citrus and the versatility of fresh herbs and botanicals sourced from the Resort’s personal garden. An extensive wine list crafted by Sommelier Jessica Altieri features wines by the bottle or glass produced by globally renowned winemakers and vineyards. Preserving the ocean and land is the foundation of the wine by the glass program, which exclusively serves 100 percent sustainable wines.

Interior Design

The design is part of interior architect and designer Martin Brudnizki’s creative vision of the entire oceanfront Resort, paying homage to the island’s relaxed yet glamorous style and famously elegant heritage. A grand bar and cocktail lounge greets guests, while an open kitchen faces the main dining room and pours out onto a pergola-covered terrace. Central to the design is a strong geometric floor pattern that links the indoor and outdoor spaces. The surrounding walls and ceiling are highlighted by coral and blush faded hues with a sun kissed quality, light warm glow and brass accents throughout, evoking the coastal style of Palm Beach.
