SINGAPORE, 2015-4-8 — /Travel PR News/ — Located in Hilton Singapore on Orchard Road, the new Opus (which means a dynamic musical composition) Bar & Grill is first grill in Singapore to have a bespoke Himalayan salt-tiled aging cabinet, where hand-selected prime meats are dry-aged between 14 days to 36 days on premise for the perfectly marbleized, tender meats with a rich depth of flavor. The grill uses only imported Australian charcoals to ensure the white-hot heat sears and creates a delicious, caramelized and smokey flavor.

Opus also prides itself as being environmentally conscious having achieved the Marine Stewardship Council (MSC)’s Chain of Custody certification even prior to the opening. Seafood dishes labeled with the ecolabel in the menu are prepared with seafood sources that are sustainably caught.

Taking center stage at the Opus Bar & Grill is the show kitchen with open flame grilling and lively theatrics that creates lots of energy and buzz where diners can feel part of the action and enjoy the wonderful aromas wafting from the grill. At the helm of the culinary team is

Chef Nick Philip, a true Australian with natural passion for grilling. Determined to make meats that are some of the best in Singapore, Chef Nick and his culinary team have done an in-depth research in stringent selections of prime meats, followed by an aging process in a bespoke Himalayan salt-tiled cabinet and coupled with open flame grilling.

Letting quality ingredients speak for themselves is the culinary mantra of Chef Nick.  His own interpretation of modern Australian cuisine is the result of a wealth of experience acquired over 15 years working extensively in different kitchens across Australia. During his recent four-year stint in Bali, Chef Nick began experimenting with local produce and Asian ingredients giving his creations an added burst of flavors and taste. His standout dishes from the Opus menu include:

Appetizer:

  • Cured salmon and tiger prawn seasoned with piquillo pepper and Thai curry condiments
  • Smoked duck breast with tangy pomegranate and tamarind dressing

Charcoal Grills and Skewers:

  • Charred chili rubbed beef fillet skewer
  • Dry-aged beef rib eye skewer
  • MSC-certified Glacier 51 toothfish fillet with Szechuan pepper and charred leek
  • Lamb rump with pea puree, confit shallots and argan oil
  • Spicy kurobuta pork belly

At the bar, the mixologist stayed true to the grill concept with cocktails inspired by different aspects of the cooking process from subtle wood smoke flavor to sweet caramelization with direct flame. They are captured in four unique creations jaliso dash, passionate flip, salted caramel old fashioned and bloomsbury bliss.  In addition, there is also a stunning line-up of cocktails inspired by Asian cuisine like the fiery tom yum (Thailand), exotic durian (Malaysian) or the milder miso soup (Japan).

The warm and welcoming interior design of Opus is influenced by evenly spaced, clean flowing lines, which are used to create a dramatic, fluid and sculptural environment. Seating 102 guests at the main dining area and 58 guests at the bar, it also features one private dining room for up to 20 guests that can be divided into two separate rooms.
