(NEWS) NEW DELHI, 2025-Nov-20 — /Travel PR News/ — Air India has unveiled an expansive new global menu designed to elevate the inflight dining experience across its international and domestic network, blending India’s diverse regional culinary heritage with contemporary global influences. Now introduced on most ex-India international routes — including services to London, New York, Melbourne, Sydney, Toronto, Dubai, and multiple U.S. West Coast destinations — the revamped menu will continue rolling out across the airline’s entire fleet as part of its broader transformation programme.
Drawing inspiration from the royal kitchens of Awadh, the coastal flavours of southern India, and the everyday comfort of homestyle dishes, the refreshed culinary offering also incorporates global favourites from Pan-Asian cuisine to European bistro dishes and other geo-specific selections. The approach is designed to appeal to a new generation of travellers seeking both authenticity and variety, with options ranging from Korean bibimbap to classic Delhi street food.
The menu’s development reflects the influence of Chef Sandeep Kalra, Air India’s newly appointed culinary director and one of India’s most celebrated chefs. Known for his inventive approach and strong leadership in the hospitality sector, Chef Kalra has held senior roles at prestigious properties such as The Ritz-Carlton, Bengaluru, and has been part of the Oberoi Group before serving as Director of Culinary at Accor’s Pullman-Novotel New Delhi. His accolades — including the “Most Innovative Chef of the Year 2018” and the Golden Hat Chef Award 2025 — underscore the expertise and creative vision guiding Air India’s refreshed dining experience, helping the airline blend authentic regional flavours with contemporary global trends.
Across all cabin classes, guests will experience elevated presentation, wider choices, and improved service touchpoints. First Class passengers can expect gourmet meals, artisanal breads, signature desserts, and bespoke wine and champagne pairings, while Business Class introduces multi-course menus with customisable options and thoughtfully curated beverages. Premium Economy and Economy guests will receive upgraded meal trays featuring wholesome regional dishes with a refined visual appeal. Highlights include Awadhi Paneer Anjeer Pasanda and Murgh Massalam in premium cabins, alongside dishes such as Rajasthani besan chilla, malabari chicken curry, manicotti forestiere, and Mediterranean tapas.
Recognising evolving dietary preferences, Air India will now offer over 18 special meal types — making it one of only a few airlines globally with such an extensive range. A dedicated plant-based, gluten-free, and allergen-conscious selection supports guests with specific needs, while online meal pre-selection through the Air India app features chef’s notes and allergen details to enhance personalisation.
Sustainability plays a major role in the new programme. The airline has committed to environmentally responsible sourcing, using seasonal local ingredients to support farmers and reduce food miles, while also implementing compostable serviceware, reduced single-use plastics, and improved waste segregation for recycling and composting. Rajesh Dogra, Chief Customer Experience Officer, emphasized that the refresh reflects Air India’s mission to innovate and transform its inflight experience, aiming to create meals that balance flavour, care, and culinary excellence.
