Hilton Singapore’s il Cielo brings modern Italian cuisine to another level with a five-day, stellar four-hands experience

SINGAPORE, 2019-Nov-07 — /Travel PR News/ — Award-winning il Cielo rooftop Italian restaurant at Hilton Singapore is taking modern Italian cuisine to another level with two top chefs — il Cielo resident Chef de Cuisine Yohhei Sasaki and Chef Patrizia di Benedetto; the acclaimed first Michelin-starred female chef in Sicily of Bye Bye Blues Restaurant will jointly present a five-day, stellar four-hands experience. From December 9 to 13, the six-course dinner priced at $188 and the four-course lunch at $68 will come with the option of adding an exquisite wine flight pairing from four glasses at $68 onwards. The handpicked wines are from Frescobaldi winery, one of the world’s famous leaders in the production of fine Tuscan wines with a rich 700 years of wine history in Tuscany.

This four-hands experience is a showcase of each chef’s personal culinary flair into the curated menu. It begins with Michelin-starred Chef Patrizia, who modernizes the likes of traditional Sicilian cuisine and flavours with innovative culinary techniques — Pesce marinato al Sale di capperi in salsa eoliana, a delightful starter of Italian sea bream drizzled with aromatic Sicilian capers, tomato juice and red onion pickles; followed by cavatelli in salsa di mare e schiuma di ricci, a hearty plate of classic cavatelli pasta topped with fresh Sicilian red prawn, squid and sea urchin espuma that elevates the fresh flavors of the sea in every bite. The main ricciola crosta di olive nere su salsa trapanese uses in-season Japanese Hamachi (amberjack fish) coated with a herbaceous Sicilian black olive crust accompanied with classic Sicilian Trapani-style pesto sauce.

Complementing Chef Patrizia’s take on modernizing classic Sicilian flavours, il Cielo resident Chef de Cuisine Sasaki presents an innovative twist of Italian flavours with his unique Japanese flair and seasonal Japanese produce. Starting with the warm starter of tartufo nero, an uncommon delicacy of creamy Japanese shirako (milt) with codfish espuma and black truffle cream; followed by foglie morte, a melt-in-your-mouth slow-cooked Wagyu beef tongue paired with fresh Shogoin kabura (white turnip) purée, Japanese eggplant leaf and aromatic miso beef sauce. Diners can look forward to concluding the experience on an unforgettable note with both chefs joining forces to present neve — a clean, snowy-white presentation unveiling refreshing flavours of zesty yoghurt snow, yoghurt gelato and meringue balanced with sweet white chocolate yogurt espuma and Chef Patrizia’s signature traditional Sicilian ricotta cheese piccolo cannoli.

The globetrotting collaborative menu presents a gastronomic homage to Italy with a harmonious union of Chef Patrizia’s and Chef Sasaki’s culinary philosophy of presenting Italian cuisine with modern techniques and finest seasonal produce flown in from Italy and Japan.
