Three culinary visionaries visit Four Seasons for a star-studded collaboration at Café Boulud

On Sunday, October 29, 2023, locals, travellers and curious food connoisseurs can embark on a culinary journey as three gastronomic powerhouses unite for an evening of flavour and innovation.
Chef Melissa Rodriguez is the talent behind New York City-based, two Michelin-starred restaurant Al Coro and sister pizzeria Mel’s. Having previously worked with Chef Daniel Boulud at Restaurant DANIEL, Chef Melissa will now stand side-by-side with Chef Daniel in the Café Boulud kitchen, adding a touch of modern Italian cuisine and years of unique experience to the one-night-only collaboration. Canoe Restaurant Executive Chef Ron McKinlay will add dishes and elements inspired by Canada’s raw and rich land – for which the celebrated dining spot is known and loved. Chef de Cuisine Colin Henderson and Chef Daniel Boulud will host the renowned chefs as they blend their individual talents with Café Boulud’s traditional French cuisine.
With Café Boulud’s elegant and sophisticated ambiance as the perfect backdrop for indulging in delicious expertise, guests are invited to taste flavours from around the world. A five-course dining experience with expert wine pairings selected by Head Sommelier Anna Jarosz will celebrate culinary artistry at its finest.
The evening will begin with a plated amuse trio. Chef Melissa Rodriguez’s vision will bring forth a Cured Hamachi with seaweed and kelp, creating a harmonious dance of ocean notes. For those craving a rich appetizer, Chef Ron McKinlay will prepare a Cured Venison Tartare thoughtfully complemented by the sweetness of green apple. Chef Daniel Boulud will prepare a Scallop Crudo elevated by the elegance of caviar to round out the trio of dishes.
For the first course, Chef Ron McKinlay will present an Onion Soup with parmesan custard, caramelized onion and laurel oil – an exquisite way to embrace autumn and the changing seasons. As guests progress to the second course, Chef Daniel Boulud will let the fruits of the sea take centre stage. His creation, Ballotine De Lotte Hommardine, will be a masterful composition featuring a monkfish and lobster roulade with lettuce, porcini and crisp salsify. Next, Chef Melissa Rodriguez will unveil a rich and fall-festive masterpiece portraying the classic flavours of the season. Rosetta Di Modena, duck with pumpkin and black truffle, is a savoury creation that encapsulates the true essence of autumn. The evening will end with a traditional sweet surprise, a Pomme Noisette featuring caramelized apple, luscious hazelnut cream, and a laminated croissant. While savouring these delights, guests can opt for curated wine pairings expertly chosen to complement and elevate each dish’s distinct flavour profiles.
