Chef Michael brings a prestigious culinary background to the team at Beverly Wilshire, located in Beverly Hills, California.

Los Angeles in Beverly Hills (Beverly Wilshire), U.S.A. – 2012-10-4 — /travelprnews.com/ — Beverly Wilshire, AFour Seasons Hotel, welcomes Chef Michael Cantin to the culinary team at The Blvd. Chef Michael arrived in Los Angeles from his previous tenure atFour Seasons Resort Maui at Wailea.

Originally hailing from New York and Massachusetts, he was inspired into his career by the cooking influence of his Greek mother, who put a strong emphasis on homemade meals and fresh, local ingredients. “Cooking is at its best when you let the ingredients speak for themselves,” says Chef Michael.

His culinary training began at the Atlanta Culinary Institute, after which he attended the famous Le Cordon Bleu in London. There he received the Grand Diplôme, one of the most prestigious culinary qualifications in the industry, which teaches classic techniques in both cuisine and pâtisserie.

While in London, Chef Michael worked for Marco Pierre White at his flagship restaurant The Mirabelle, a Michelin two-star rated venue. Upon returning to the United States, he spent the next decade working in a variety of regions and restaurants, including Thomas Keller’s Bouchon in Yountville, California, Todd English’s Kingfish Hall in Boston and later opening English’s Pescado in Coral Gables, Florida. After his time as sous chef at Sushi Samba Dromo in Miami, Chef Michael moved with his family to Maui where he worked at Sansei Restaurant in Kihei, and in 2007 he joined Ferraro’s atFour Seasons Resort Maui. His dedication and talent had him promoted to Chef de Cuisine shortly thereafter, where he helped position Ferraro’s as a leader in the local food scene, receiving the Gold for Best Italian at the Aipono Awards in 2009 and 2011.

This diverse background in culture and culinary experience was imperative in developing Chef Michael’s palate and his culinary style, now featured in The Blvd.

When not at work, Michael, his wife Amy and their three children, Mason, Sophia and Isabelle enjoy the active lifestyle that the west coast provides.
