Brilliantly incorporating locally grown produce and sustainably sourced seafood through the new menu available from March 1 to May 31, 2019, the chefs also aim to heighten awareness on two celebrated global environmental initiatives, namely Earth Hour which falls on March 30, 2019, and Earth Day on April 22, 2019.
Showcasing simple and tasty dishes that are healthy yet do not compromise on flavors, diners can look forward to dedicated farm-to-table creations that are crafted in support of the two global movements:
- Local farmed vegetable lasagna with tomato, zucchini, aubergine, cauliflower and broccoli
- Marine Stewardship Council (MSC)-certified sustainable seafood of Nonya-style New Zealand rockling fish with spicy sour tomato and pineapple gravy, organic okras and brown rice
Other new must-try menu highlights include:
- Grilled tuna burger on a sunflower seed brioche bun, bonito mayo, chunky tomato and yuzu relish
- Oven-baked lemongrass lacto chicken with spicy rice noodle and Asian green herb salad
- Low Glycemic Index (GI) pita pocket with peppered tender Wagyu beef and mixed capsicums
Verde Kitchen signatures include:
- Super food organic spinach and quinoa salad with green apple, pumpkin seed and pomegranate
- Vietnamese pho with grass-fed beef fillet and rice noodles with Asian herbs and spices
- Aquaculture Stewardship Council (ASC)-certified sustainable seafood of almond-crusted salmon with arugula and feta cheese, green pea mash with coconut oil dressing
Verde Kitchen, the cozy 32-seat restaurant located on level two of Hilton Singapore, is committed to serving food that is best for individuals and local communities. The menu features a variety of great-tasting healthy dishes, including gluten-free, dairy-free, vegetarian and raw food options. Ninety-eight percent of the menu items are made from scratch in-house every day. Sixty percent of the seafood served is sustainably sourced and carries the MSC/ASC eco-labels. All chicken and eggs are certified organic, free-range and lacto-free. These sustainably sourced ingredients and menu items support Hilton’s Travel with Purpose 2030 goal to cut the company’s environmental footprint in half and double investment in social impact.
