Riviera Maya, Mexico, 2019-Mar-06 — /Travel PR News/ — This past weekend, Rosewood Mayakoba commemorated the unique culture and rich diversity of Mexico by hosting its inaugural Yo ♥ Mexico celebration. From February 22-24, guests joined Executive Chef Juan Pablo Loza alongside acclaimed chefs Rick Bayless, Edgar Nuñez and Javier Plascencia for a weekend of festivities showcasing the culinary heritage and exceptional flavors of the region.

The event kicked off with a chef’s welcome dinner under the stars in La Ceiba Garden & Kitchen, with dishes including Chef Bayless’ fire-grilled octopus; striped bass prepared by Edgar Nuñez; succulent lamb by Javier Plascencia; and other unique items such as Sikil Paak a medley of tomatoes, tomatillos, pepitas and smoked onions, and Pacific Lobsters Zarandeado, a La Ceiba classic. Each dish was paired with wines from Adobe Guadalupe, one of Mexico’s oldest wineries located in alle de Guadalupe, whose owner and founder, Tru Miller, was on site to share the history and flavor profiles from her vintages, including tastings of Polvo de Mar, Rosewood Mayakoba’s signature blend created by the brand.
With a focus on local and sustainable ingredients with a nod to Mexican cooking techniques and traditions, one-of-a-kind culinary experiences were created by resident and guest celebrity chefs throughout the rest of the weekend. Saturday began with a luncheon featuring craft cocktails by Mezcal Montelobos and Ancho Reyes, while Chef Loza prepared a menu highlighting Aqui Me Quedo favorites paired with Cerveza Akumal. Saturday night saw chefs Rick Bayless, Edgar Nuñez, Javier Plascencia, Juan Pablo Loza, Froylan Ramos and Fidel Baeza come together for an unmatched dining experience, featuring dishes including Chicken Thighs with Guacachile; Abalone with Rice and Local Vegetables; Beef Veracruzana Style; and Jabugo Ham with Salad Fish Wrapped in Banana Leaf Lamb Chops. Guest enjoyed the evening while listening to an urban funk playlist by UFO Band, followed by dancing to the beats of DJ Alessio Ayala under the stars into the early hours of the morning.
In order to give back to the local community, Saturday evening’s festivities raised more than USD$10,000 to further support Centro Educativo K’iin Beh, a local elementary school funded by friends and associates of Rosewood Mayakoba. The school offers local youth and children of resort associates a comprehensive, bilingual, full-time education and scholarship-based enrollment.
