NoMad London Unveils Twenty8 NoMad: Wood-Fired NYC Flavors in a Modern Victorian Setting

(IN SHORT) NoMad London launches Twenty8 NoMad, a New York–inspired bistro in its historic 28 Bow Street home. Designed by Martin Brudnizki, the restaurant evokes a contemporary palm court with rattan detailing, greenery, and a central wood-burning hearth. Its menu—overseen by Bryce Shuman, Zak Gregoire, and Martha Hernandez—features NYC classics reimagined: Union Square–style crudités, Little Italy flatbread, NoMad Chicken with truffles and foie gras, wood-fired steaks, and a robust Raw Bar. Leo Robitschek’s cocktail program traces the martini’s history, and Wine Director Alessia Ferrarello offers half-bottle carafes focused on provenance. The space also exhibits Napoleon Sarony portraits of Oscar Wilde, connecting the site’s judicial past to its present dining experience. Twenty8 NoMad is open daily, blending London heritage with New York flair.

(PRESS RELEASE) LONDON, 2025-Jun-18 — /Travel PR News/ — NoMad London, the Covent Garden flagship of the acclaimed NoMad Hotels brand, unveils Twenty8 NoMad, a vibrant New York–style bistro nestled at 28 Bow Street opposite the Royal Opera House. Led by NoMad Culinary Director Bryce Shuman alongside Executive Chef Zak Gregoire and Pastry Chef Martha Hernandez, the restaurant pays homage to its Manhattan roots (28 Street) and its historic London home (28 Bow Street), blending classic NYC flavors with a modern palm court aesthetic.

NoMad Twenty8 Seared Cod – Steak Frites – Seafood Tower

Martin Brudnizki Design Studio has transformed the space into a moody, playful interpretation of the grand Victorian palm court, layering rattan accents, verdant greenery, and textured trinkets around a central wood-burning hearth. Earthy tones of deep brown, lush green, and spicy mustard create an inviting atmosphere, while an art program showcases Napoleon Sarony’s avant-garde portraits of Oscar Wilde—who was once tried at this former magistrate’s court.

The menu revisits New York classics through NoMad’s creative lens: crudités inspired by Union Square Greenmarket; grilled flatbread using a secret Little Italy dough; and the signature NoMad Chicken with black truffles and foie gras. Wood-fired specialties—like dry-aged Galician Blond Steak—and a Raw Bar celebrating Nantucket’s seafood heritage complete the lineup. Four bespoke cocktails from Leo Robitschek chart the martini’s evolution, from the Martinez to the smoked-olive Twenty8 Martini, alongside New York icons such as the Cosmopolitan and Clover Club. Wine Director Alessia Ferrarello champions family-style service with half-bottle carafes and a focus on provenance, particularly Nebbiolo.

“Opening Twenty8 NoMad feels like coming home,” says Bryce Shuman. “I’m thrilled to share my New York culinary passions here in London’s culinary heart.” Founder and CEO Andrew Zobler adds, “This restaurant revives the convivial spirit of the original 28 Bow Street palm court, seen through a New Yorker’s eyes—modern, inclusive, and electric.”

Twenty8 NoMad opens daily for breakfast, lunch, and dinner at 28 Bow St, London WC2E 7AW. Bookings are available via OpenTable and at thenomadhotel.com/london/.
