Located at the hotel’s highest venue space on level 24 amidst beautiful sunset views, the extravagant spread extends to four live stations and over 90 dishes including the best of traditional iftar Malay dishes and specialty cuisines, from Moroccan and Indian to Japanese. Available from April 25 to May 23, the Iftar Buffet is verified as Halal by Majlis Ugama Islam Singapura.
Spotlighting on four live stations, guests will be captivated by not only the quality but also authentic recipes of the food, all served à la minute right before their eyes. High on the chef’s recommendation this year is the aromatic slow-cooked lamb dum biryani served with juicy slices of whole tandoori lamb leg. Other live stations include hawker-style chicken rice, popular Singapore Laksa and desserts namely ice kacang (shaved ice with condiments) and cendol, a sweet dessert of coconut milk with bright-coloured green noodles and palm sugar.
Among the selections will be highlights of this season’s must-haves of bubur lambuk daging (rice porridge with meat), soup kambing (mutton soup) and Malay dishes prepared with chefs’ family-treasured recipes. The spicy beef ‘rendang’, sambal prawns & squids (prawns cooked with chilli paste), ayam lemak chilli padi (chicken in spicy coconut cream) are perfect to be savoured with steamed jasmine rice.
The bountiful spread is further elevated with seafood-on-ice brimming with ocean-fresh Canadian oysters, tiger prawns and mussels as well as a variety of international cuisines from a sushi and sashimi counter and Moroccan specialties by Chef Tazi, Indian station to freshly steamed piping hot Chinese dim sum selections.
The bazaar delights corner offers everyone’s favourite chicken and mutton satay (skewer), the new nasi lemak chicken burger (fragrant brioche bun with chicken cutlet, cucumber and sambal) and ‘goreng-goreng’ station with deep-fried ikan lekor (fish sausage), bebola ikan (deep-fried fish balls), mini mutton samosa and many more.
The dessert station is a fitting finale for the Iftar buffet with a colourful array of famous Hilton cheesecakes, traditional chiffon cakes, Malay kueh (cakes), cookies, interesting flavored ice creams and a live station of putu puring (steamed rice flour cake with palm sugar). Diners can also look forward to popular thirst quenchers such as bandung, iced milo and teh tarik (traditional pulled milk tea).
