From Mahi Mahi to mocktails: Fiji Airways elevates inflight service with chef-finished dishes, island-inspired drinks and upgraded Economy options

(IN SHORT) Fiji Airways is overhauling its onboard offering with a Pacific Rim–inspired menu and a new Dine on Demand service in Business Class, initially on select long-haul flights. The program lets passengers choose dishes and timing, elevating personalisation and comfort. Signature items—such as Grilled Mahi Mahi with Prawn Chilli Oil, Hamachi Crudo with Octopus and Ponzu, and a coconut-rich Fijian Chicken Curry—reflect Fiji’s geographic and cultural connections to Asia, Oceania and North America, and emphasise sustainably sourced local ingredients. Desserts like Salted Chocolate Crème with Pistachio and Caramelised Banana and a punchy Kumquat Cheesecake round out the experience. Beverages include Fiji-made cold-pressed juices, a curated tri-regional wine list, cocktails and mocktails featuring Blue Turtle Gin Fiji and Fijian Bati Rum, plus artisanal local chocolate. Business Class tables feature handcrafted Vau flowers, bone china and white linens, while Economy receives upgraded meals, new drinks (including hot chocolate), and snacks, with special diets accommodated. CEO Andre Viljoen positions the changes as part of a wider “game-changing” strategy to put Fiji’s flag carrier on par with top global airlines. The full rollout across the network is slated for completion by July 2026.

(PRESS RELEASE) NADI, Fiji, 2025-Jul-23 — /Travel PR News/ — Fiji Airways is rolling out a raft of fresh inflight experiences, starting with a colourful, Pacific Rim–inspired menu now appearing on select services—an emphatic move that deepens the airline’s promise of warm Fijian hospitality, attentive service and world-class standards.

At the centre of this culinary evolution is Dine on Demand for Business Class, debuting on chosen long-haul routes and marking a first for the carrier. Guests decide exactly what—and when—they eat, turning the cabin into a personalised restaurant in the sky.

“Fijian hospitality is at the heart of what we do,” said Andre Viljoen, CEO and Managing Director, Fiji Airways. “This next chapter elevates that promise. With the initial introduction of our new Pacific Rim menu and on-demand dining, we’re delivering a fine-dining restaurant-quality experience in the sky – one that is authentically Fijian, thoughtfully crafted, and aligned with the evolving needs of today’s traveller.”

A menu that tells Fiji’s story through taste
Positioned between Asia, Oceania and North America, Fiji is a natural culinary crossroads. The new menu mirrors that geography, weaving together bold Southeast Asian accents, contemporary Australian influences and Pacific Island traditions, all while spotlighting Fijian produce and sustainable sourcing.

Business Class signature highlights include:

  • Grilled Mahi Mahi with Prawn Chilli Oil – corn–coriander cake and lime marmalade evoke the coast
  • Hamachi Crudo with Octopus and Ponzu – bright and briny with Fijian sea grapes (nama) and herbs
  • Fijian Chicken Curry – coconut-simmered comfort honouring Indo-Fijian heritage
  • Roasted Cauliflower with Pacific Greens and Garlic Cream – the hero plant-based option
  • Salted Chocolate Crème with Pistachio and Caramelised Banana – indulgence with tropical flair
  • Kumquat Cheesecake – a zesty finale with real punch

Dishes are finished and plated onboard for restaurant-level presentation. Cabin crew receive specialised culinary and wine training to deliver a seamless, highly tailored service.

Elevated drinks and thoughtful touches
The Business Class refresh extends beyond the plate:

  • Cold-pressed juices crafted in Fiji from local tropical fruits and vegetables
  • A refined wine selection featuring standouts from New Zealand, Australia and California
  • Island-inspired signature cocktails and zero-proof creations starring Blue Turtle Gin Fiji and Fijian Bati Rum
  • Artisanal Fijian chocolate paired with tea and coffee
  • Tables dressed with handcrafted Vau flowers made in Fiji, bone china tableware and crisp white cotton linens

A better Economy experience too
Economy travellers aren’t left behind. Updated meal choices, a new cocktail and mocktail program, hot chocolate, and an expanded snack and beverage offering are available throughout the flight. Pre-arranged special meals ensure inclusivity across all cabins.

These enhancements are part of Fiji Airways’ broader slate of “game-changing” initiatives designed to position the national carrier alongside the world’s best.

“We fly for Fiji,” Viljoen added. “As the national carrier, we recognise the profound role we play in connecting Fiji to the world, and sharing the unique warmth and happiness that only Fiji offers. Through our strategic investments in our food, beverage, service training, and sustainable sourcing of materials, we’re bringing that happiness in every journey.”

The Pacific Rim menu, service model and Dine on Demand concept are rolling out progressively on select long-haul flights now and will be fully implemented across the network by July 2026.
