Peruvian Salute At Glass Brasserie, Hilton Sydney

SYDNEY – 2012-10-8 — /travelprnews.com/ — Indulge in a gastronomic journey with world-renowned chefs Luke Mangan and Food & Wine Magazine “Best new Chef 2011” Ricardo Zarate at the award-winning glass brasserie, Hilton Sydney. Joining together for the first time “Peruvian Salute” will showcase a fusion of modern Australian-Peruvian cuisine.

“Peruvian Salute” is a ‘world-dinners’ event which is part of The Sydney Morning Herald Crave Sydney International Food Festival, a 31-day celebration of world-class food and produce (October 1- 31). Guests attending “Peruvian Salute” will sample provincial dishes incorporating key ingredients from Australia and Peru, with each course expertly matched by glass brasserie’s chef sommelier and multi-award winner, Kim Bickley.

Going off the “eaten track” and digging into their cultural hearts, “Peruvian Salute” features Luke Mangan, one of Australia’s leading chefs and restaurateurs who will be joined by Peruvian native based in Los Angeles, Ricardo Zarate. Zarate has thrilled critics as one of the leader’s in nouveau-Peruvian cuisine in Los Angeles. Zarate returns to Crave, after his appearance in 2011 when he was featured as one of the international chefs at the ‘World Chef Showcase’, he has two restaurants in Los Angeles “Mo-Chica and “Picca” – the latter recently cited in GQ Magazine as one of the “Ten Best New Restaurants in America.”

Luke Mangan, glass brasserie, said “Having been wooed by Ricardo’s Peruvian cooking in LA many a times, it is a privilege to have him join me in my flagship restaurant and collaborate on this exciting dinner concept. Our menu will incorporate traditional Peruvian ingredients like morcilla, fresh seafood and Aji Amarillo, married with contemporary techniques and combinations. Peruvian cuisine isn’t the most known cuisine in Sydney and what better way to educate our palates than with the food of a leader in nouveau-Peruvian gastronomy.”

Ricardo Zarate, said “I am very excited to return to Sydney and Crave, last year I was so impressed with the quality of produce available and cannot wait to get back and enjoy the amazing food and fresh produce. This year I’m mostly excited to give Australians a taste of my home, Peru. Australia is so far away and I’m looking forward to seeing the reaction people will have to my food. I’m looking forward to be working with Luke for the first time, we are both such different people from different backgrounds, countries and cultures, I’m eager to see how our dishes will come together to form a balanced multi-course meal and cohesive experience.”
