2012-07-20 — /travelprnews.com/ — A new high-quality deli in Copenhagen Airport’s Terminal 2 is based on Danish nutrition expert Louise Bruun’s philosophy that good and wholesome food will make you happy. The concept results from an unusual partnership between food and beverage operator SSP and well-known Copenhagen restaurateurs Jakob Blom and Kristian Willumsen.

A quick glance at Foodmarket’s menu reveals delicious soups, hot wraps, tasty salads, freshly baked organic bread and made-to-order sandwiches, burgers and juices. Fresh and primarily organic produce is focal to the high-quality universe that results from an unusual partnership between food and beverage operator SSP and Copenhagen restaurant owners Jakob Blom and Kristian Willumsen, also known as “The Olsen Boys”. With many years of experience from the highly successful Copenhagen restaurants ‘Olsen’, ‘Konrad’ and ‘GrillBar’, they know better than most people what it takes to create a strong concept:

“It was important for us to develop a credible universe based on the principles of proximity, sustainability and close collaboration with our suppliers,” said Jakob Blom, who emphasises that the partnership with nutrition expert Louise Bruun perfectly matches those demands: “Louise’s views on, passion for and knowledge about food and lifestyle are tantamount to Foodmarket,” said Jakob Blom.

80/20 guides to a healthy lifestyle

Louise Bruun’s philosophy is based on the 80/20 principle of eating wholesome food most of the time, but also leaves room for the things you love. Therefore, Foodmarket also sells cookies, cakes and snacks, again matching the high quality requirements for ingredients. All suppliers have been carefully selected to support the concept, including a bakery offering organic bread based on recipes specially developed for Foodmarket.

“The focus on organic food and food quality has become much more widespread in Denmark in recent years, and our surveys indicate that this also goes for the food that passengers eat on the go. Foodmarket will add a good deal of quality to the fast food concept, and Louise Bruun’s concept proves that fast food can certainly be both good and wholesome,” says Henrik Andersen, CEO of SSP Denmark A/S.

Catering to any taste and budget

The opening of Foodmarket is an important element of Copenhagen Airport’s efforts to cater to the passengers’ needs and demands, said Carsten Nørland, VP, Sales & Marketing, for Copenhagen Airports:

“Our focus is on guiding the passengers to good travel experiences. We therefore conduct more than 130,000 passenger interviews annually using the responses as a guide to how we should develop the shopping centre. We want to offer value for money for everyone, whether you want oysters and a steak, or a salad or sandwich on your way to the gate or onboard the plane.”

In addition to Foodmarket, SSP recently opened the popular steak house MASH in Terminal 2. Later this year, SSP will add yet another Copenhagen favorite to its airport offer: Le Sommelier Bar & Bistro is scheduled to open in December 2012.
