Led by Executive Chef Neil Campbell and General Manager Marisha Wilson, the restaurant will emphasize locally sourced Dutch ingredients and offer breakfast, lunch, and dinner service. Designed by Alex Meitlis within the hotel’s historic glass atrium, the restaurant will accommodate 85 guests inside and 30 on an outdoor terrace, blending Ottolenghi’s signature culinary style with Amsterdam’s cultural and architectural heritage.

(PRESS RELEASE) HONG KONG, 2026-Mar-10 — /Travel PR News/ — Ottolenghi Amsterdam is preparing to welcome its first guests on 19 March 2026, marking chef and restaurateur Yotam Ottolenghi’s return to the Dutch capital three decades after living in the city. The new restaurant, located at the Mandarin Oriental Conservatorium in Amsterdam, represents Ottolenghi’s first dining concept in the Netherlands and his second restaurant in mainland Europe.

Reservations for the restaurant are now open online ahead of the official launch. The venue will offer an all-day dining experience built around a vegetable-focused menu, highlighting seasonal Dutch produce while reflecting the bold flavours and creative combinations that have become synonymous with the Ottolenghi culinary style.

The menu places a strong emphasis on grilling and fermentation techniques and combines well-known Ottolenghi dishes with new creations developed specifically for the Amsterdam opening. Signature offerings will include dishes such as celeriac shawarma served with pita, bkeila, and fermented tomato, alongside new plates like white and green asparagus with pickled chilli, anchovy, and seed dukkah. Another addition created to celebrate the partnership between Ottolenghi and the Mandarin Oriental Conservatorium is a Hong Kong–style French toast served with tahini and sweet hawaij.

The restaurant will be run by a local team trained under the Ottolenghi brand’s culinary philosophy. Executive Chef Neil Campbell and General Manager Marisha Wilson, who together have spent nearly two decades leading Ottolenghi’s London restaurants ROVI and NOPI, have overseen the preparation of the Amsterdam launch. Wilson will relocate from London to take on the role of General Manager for Ottolenghi Amsterdam.

Situated within the Mandarin Oriental Conservatorium in the city’s Museum District, the restaurant is located near some of Amsterdam’s most prominent cultural landmarks, including the Rijksmuseum, the Stedelijk Museum, the Van Gogh Museum, and the Concertgebouw.

Yotam Ottolenghi, widely known for bestselling cookbooks such as Plenty, Simple, and Comfort, previously lived in Amsterdam in 1995 while studying before moving to London. Since opening his first deli in Notting Hill in 2002, the Ottolenghi brand has grown to include multiple restaurants and food concepts in the United Kingdom. The Amsterdam venue will become the twelfth location globally, following the opening of a restaurant at Mandarin Oriental Geneva in early 2025.

Ottolenghi said the team has invested significant effort into designing a menu that celebrates local Dutch ingredients while maintaining the vibrant and generous flavours associated with his cuisine. He described the opening as a meaningful moment that brings together his connection to Amsterdam with the culinary approach developed through his restaurants and cookbooks.

Susanne Hatje, General Manager of Mandarin Oriental Conservatorium Amsterdam, noted that the opening represents an important milestone for the hotel and adds a new dimension to the city’s culinary landscape. The restaurant aims to create a welcoming space where both hotel guests and local diners can gather and share memorable dining experiences.

The Amsterdam kitchen draws inspiration from Ottolenghi’s ROVI restaurant in London, which is known for its vegetable-centric menu and sharing-style dishes. Ingredients used in the kitchen will be sourced locally whenever possible, including dairy products from Over Amstel Boerderij, leafy greens from TopKrop Farm in Molenlaan, and aubergines grown by the Zwinkels family, long-established producers located near Amsterdam.

Menu highlights include dishes such as beef carpaccio with pickled Jerusalem artichoke and labneh, lamb chops with grated tomato and cumin salt, brothy chickpeas with parmesan stock and green chilli shatta, braised carrots with lentils and pickled kumquats, and chicken skewers with a coffee rub and toum sauce. Desserts include squash and pear fritters with coconut sorbet, preserved lemon pavlova with mascarpone cream, and apple mille-feuille with calvados butter.

The drinks programme features a selection of natural wines alongside a cocktail list that includes signature creations such as the Shatta Margarita, Ottolenghi Martini, and Cheong Sour. A variety of non-alcoholic wines, artisanal soft drinks, and alcohol-free cocktails will also be available.

During the spring season, the restaurant will introduce an outdoor terrace that allows guests to dine outside in warmer weather.

The design of Ottolenghi Amsterdam reflects the brand’s established visual identity while incorporating elements inspired by the Dutch landscape. The restaurant occupies the hotel’s iconic glass atrium, located within a historic building originally constructed in the late nineteenth century as the Rijkspostspaarbank before later becoming the Sweelinck Conservatorium.

The interior has been designed by long-time Ottolenghi collaborator Alex Meitlis, who has worked on every Ottolenghi restaurant in London for more than 25 years as well as the Geneva location. The space features indoor trees and natural elements intended to evoke the atmosphere of an outdoor landscape, creating a setting where guests feel surrounded by greenery while dining.

Artwork created by Gilles & Cecilie Studio also forms part of the restaurant’s design. Inspired by the natural landscapes of the Netherlands and the figurative traditions of Delft ceramics, the artwork uses layered colour and expressive brushwork to create a visual environment that balances brightness and calm.

Ottolenghi Amsterdam will accommodate up to 85 guests inside the restaurant, with an additional 30 seats available on the terrace. The venue will serve breakfast until 11 a.m., followed by all-day dining from midday until 10 p.m.
