(PRESS RELEASE) LONDON, 2025-May-8 — /Travel PR News/ — This summer, The Peninsula London invites guests to experience the Mediterranean-inspired dining concept, Soleil by Claude, a vibrant rooftop pop-up that brings the laid-back charm of Southern Europe to Belgravia. From July 2nd to August 31st, 2025, Soleil by Claude will take over the eighth-floor terrace, temporarily replacing the two Michelin-starred Brooklands restaurant, and will offer a relaxed, sun-kissed atmosphere paired with delicious, shareable dishes inspired by Mediterranean classics.
Created by renowned Chef Director Claude Bosi, Soleil by Claude celebrates the very best of British produce while embracing the vibrant flavours of the Mediterranean. The summer-long pop-up features a menu designed for easy sharing, including breakfast, lunch, and dinner, all served against the stunning backdrop of the London skyline. Guests can enjoy leisurely meals, golden hour Spritz, and balmy dinners while soaking in the breathtaking panoramic views. The terrace will also host a weekend DJ from Friday to Sunday, providing the perfect soundtrack for the summer season.
Claude Bosi explains: “With Soleil by Claude, we wanted to create a place that captures the essence of summer—where time slows down, meals are shared, and the atmosphere is unhurried. It’s inspired by those long meals you have on holiday, surrounded by incredible food and conversation. We’ve brought the Mediterranean spirit I love, combined with the best of British produce, all set in the remarkable setting of The Peninsula London’s eighth floor.”
The pop-up’s menu celebrates Mediterranean-inspired dishes, focusing on fresh, seasonal ingredients sourced from the UK’s independent farms. Standout items include Polpo Carpaccio, fresh seafood platters featuring the best British shellfish, and a rotating selection of locally sourced crudités. Indulgent sharing plates feature seven-hour braised lamb shoulder with Nicoise sauce, fresh pasta, and flambeed sea bass in a salt crust for two. For dessert, guests can enjoy playful Baked Alaska with seasonal fruits or a simple, elegant seasonal fruit tarte.
To enhance the Mediterranean atmosphere, a Pétanque pit, sponsored by Minuty, will be set up on the terrace for a fun touch. The drinks menu features an extensive list of seasonal rosé wines, a signature cocktail menu created exclusively for the pop-up, and a refreshed selection of Spritz cocktails.
After the pop-up, Brooklands by Claude Bosi will reopen on September 5th, 2025, with a brand-new autumn menu.
