Chef Díaz hails from Buenos Aires where he is currently restaurant chef at Elena, the stunning new restaurant at Four Seasons in the capital city’s Recoleta district. Frequented by tourists and porteñosalike, Elena’s menu offers an experience of charcuterie, dry-aged beef, rotisserie and Argentine wine. Specializing in produce from the source, the restaurant’s style celebrates local ingredients and going back to the basics of Argentine cooking, presenting an authentic menu with Díaz’s sophisticated and contemporary flare. Showcasing all of her namesake, Elena is the epitome of modern-day Buenos Aires glamour, a woman who was the belle of the city’s belle époque era.

Working alongside Executive Chef Herve Fucho, Chef Diaz presents an abridged version of Elena’s current menu, specifically flying produce in from Argentina for the occasion. Having flown to Buenos Aires to assist with the opening of Elena at the beginning of 2013, Fucho says he is delighted to welcome Chef Díaz at The Lounge for this unique promotion: “Hong Kong is having a culinary love affair with the Americas and Mexico right now. The timing is so perfect to bring Nicolás over and show our local guests something else from South America – La Vida Argentina!”
Highlights from Elena at The Lounge during the eight-day promotion include appetizers of: melted provoleta with roasted criolla sauce and grilled sourdough; and Patagonian spider crab salpicón with red onion, Córdoba capers, hard boiled egg and tomatoes. Main courses will be a selection of three from the original Elena menu including two seafood options and one meat, including roast Patagonian lamb with corn humita and cachi pepper oil; as well as three different cuts of Luis Barco 65-day dry-aged beef grilled on the charcoal grill; and rib eye, skirt steak or braised boneless ribs, all served with hand cut fries and garlic swiss chard. To end, desserts include Latin America’s famed dulche de leche panqueques with vanilla ice cream; bread pudding with elderberry spread and sorbet; churros with dulce de leche sauce, Patagonian berry sauce and whipped cream; or a selection of Argentine sorbets and ice creams.
La Vida Argentina is available for dinner only; reservations can be made by non-resident guests and prices start from HKD 345.00 for main courses.
In addition to serving an extended list of Argentine wines, this year’s guest chef promotion at The Lounge also incorporates art. Working in conjunction with Adriana Alvarez-Nichol, the founder of Puerta Roja, Hong Kong’s first gallery dedicated to Latin American art, The Lounge will display a beautiful selection of contemporary Argentian oil paintings and sculptures by native Martha Zuik.
