The Cocoon Collection will be proudly hosting three exclusive evenings during ILTM on the French Riviera from 2 – 4 December 2025 – showcasing the art of Italian cuisine, sustainability, and a deep passion for authentic flavour.
Cuisine has always been an essential component of The Cocoon Collection experience, which celebrates gastronomic culture through Gourmet Weeks: high-profile events that enliven its properties in the Maldives and Zanzibar, where leading national and international chefs reinterpret flavours and traditions to offer guests a unique culinary journey.
With this same spirit of sharing and pursuit of excellence, the three Cannes evenings were born, designed to convey the authentic soul of the brand through the universal language of taste.
Always focused on creating experiences that convey identity and local culture, The Cocoon Collection considers gastronomic events to be fundamental moments of encounter, where conviviality intertwines with research and elegance.
The protagonists of these evenings are three great names in Italian haute cuisine, namely, Giovanni De Ambrosis, Culinary Director of The Cocoon Collection, Daniele Provezza, Chef Owner of Dispensa Franciacorta and Roberto Valbuzzi, a well-known face on television and chef and owner of Crotto Valtellina.
United by deep professional respect and sincere friendship, the chefs will bring to Cannes a tale of micro-territoriality, an expression of their love for raw ingredients and their connection to their homelands. Each dish will be part of a sensory journey that unites Italy with the international atmosphere of the French Riviera.
The evenings will open with a six-handed aperitif, a trio of creations that will showcase the identity of each chef, followed by a menu that will be renewed each evening in the spirit of creativity. The dessert will be a shared creation, accompanied by two artisanal panettone cakes with their creams, a symbol of unity and sharing.
