PABU Izakaya Announces Exclusive Dinner Series Offering Guests an Inspired Japanese Culinary Experience at Four Seasons Hotel Baltimore

Introducing The Tatami Table Dinners with Chef Jonah Kim.

2013-03-01 — /travelprnews.com/ — Since its opening, PABU Izakaya has brought Baltimore culinary enthusiasts and novices a taste of Japan. The izakaya style dining restaurant located Four Seasons Hotel Baltimore in Harbor East is the first of its kind in the city, modeled after the traditional Japanese drinking establishments offering socially intimate dining. On March 20, 2013 PABU will unveil The Tatami Table Dinners, a private dining adventure where Chef Jonah Kim will take guests on a culinary journey unlike any other.

Named for PABU’s private dining room, each Tatami Table Dinner will be focused on one aspect of Japanese cuisine such as a seasonal ingredient, a traditional holiday meal, or cooking technique. Sourcing locally and from afar from only the best purveyors allows Chef Jonah to present a distinguished menu for the most discriminating palates. Having worked his way through some of the finest kitchens in America, Chef Jonah has honed his traditional Japanese preparation and cooking methods alongside chefs David Varley, Tyson Cole and now Ken Tominaga. Gourmands and novices will be offered an optional beverage pairing with the meal, hand selected by PABU’s own Master Sake Sommelier Tiffany Soto.

For the premiere Tatami Table Dinner on March 20, Chef Jonah will prepare a multi-course meal inspired by sushi and the Tsukiji Market, the largest wholesale fish and seafood market in the world, located in Tokyo. PABU sources a majority of its fish for sashimi and sushi offerings from the Tsukiji Market. With a history reaching back 400 years, the Tsukiji Market handles more than 400 different types of seafood and more than 2,000 tons (2 million kilograms) each day.

PABU presents a small-plates menu offering authentic dishes suchrobatayaki and okonomiyaki as well as sushi, sashimi and tempura. At PABU, the culinary offerings are complemented by an extensive beverage program curated by Master Sake Sommelier Tiffany Dawn Soto that includes Asian beers and wines, Asian-inspired cocktails, Japanese whisky, and the largest sake selection available on the East Coast.
