This new dining experience, set in the iconic riverside restaurant, introduces a more relaxed yet refined take on luxury dining under the direction of acclaimed two Michelin-starred Chef Alex Dilling.
After a highly successful residency at Le Normandie in 2024 and early 2025, where Chef Dilling earned a Michelin star, he returns to Bangkok to present his first permanent concept in Thailand. Drawing inspiration from the timeless traditions of Provençal cooking, Chef Dilling’s menu reimagines classic French comfort food with a global twist. The result is a menu that blends open-fire grilling, French-inspired comfort dishes, and a convivial, sharing-style approach that redefines fine dining for the modern guest.
The menu offers a curated selection of starters and mains designed to be shared and enjoyed together, from the delicate Mozzarella Barbajuan and Organic Crudités with Caesar dip, to the elegant Japanese Sea Bream in Cucumber Gazpacho. Main courses like the Whole Roasted Chicken with Maitake Mushrooms and Foie Gras, and the Grilled Dry-Aged Côte de Bœuf with Café de Paris Butter, Bone Marrow, and Béarnaise, reflect Chef Dilling’s classical French roots while infusing bold, contemporary flavors. Sides such as Duck Fat Triple-Cooked Hash Browns elevate the entire dining experience. With sustainably sourced ingredients, including produce from the hotel’s organic farm, each dish is thoughtfully crafted. The meal concludes with indulgent desserts such as Banana Mille-Feuille and the delicate Île Flottante, perfect for special occasions, business gatherings, or intimate dinners.
The dining experience is complemented by a curated selection of wines by the glass, designed to encourage exploration, alongside a bespoke cocktail menu developed in collaboration with the hotel’s renowned The Bamboo Bar.

Joining Chef Dilling is Chef George Kay, who worked alongside him in London and played a pivotal role in securing two Michelin stars for Dilling’s namesake restaurant. Chef Kay, who also successfully led Le Normandie during Dilling’s Bangkok residency, brings his passion and expertise to Lord Jim’s as Chef de Cuisine.
Since its inception in 1976, Lord Jim’s has been a landmark of culinary excellence along the Chao Phraya River. The restaurant now enters a new era, merging traditional craftsmanship with contemporary expression, ensuring every element of the dining experience lingers long after the final course.
Alex Dilling at Lord Jim’s opens on May 16, 2025, serving dinner from 6:30 PM to 10:00 PM, Friday through Tuesday. Special collaborations and guest appearances by Chef Dilling will be announced throughout the year.
