PARIS, 2014-8-11 — /Travel PR News/ — From 1 September until 12 October, Le Royal Monceau, Raffles Paris and Executive Chef Laurent André celebrate the launch of Dom Pérignon Rosé 2003 Vintage, described by Dom Pérignon Brand as ‘‘a year of superlatives: one like no other, defined by extremes’’. The Parisian palace infused by art and culture introduces a temporary Dom Pérignon Suite for guests to embark on a two day journey while experiencing the newly created ‘Rosé Paradox’ menu at La Cuisine, the hotel’s Michelin starred restaurant, followed by a trip to Champagne during the harvest.
The ‘Rosé Paradox’ menu has been developed during a workshop attended by 9 chefs from across the world, including Mexico, Japan, the United States and Italy. Each course emphasizes the extremely complex bouquet of Rosé Vintage 2003, with notes of ripe fruit, fig, violet and vanilla and a silky, spicy material which gradually disappears into a salty and mineral finish.
A personal reinterpretation by Laurent André, Executive Chef at Le Royal Monceau – Raffles Paris and the only French chef that was present at the workshop, the 5 course menu, priced at 130 € per person, will be available every evening exclusively at La Cuisine restaurant and in the lounge areas for private dining.
On the menu: salmon salad and rabbit with hazelnut butter (Chef Matteo Baronetto, Turin, Italy); Hamachi ceviche, rhubarb and crispy scallops (Chef Oliver Ollysan ‘Lange, London, England); Quenelles on a skewer with black truffles and lobster sauce (Chef Laurent André, Paris, France); green pea Vichyssoise, carbonara with duck breast and cocoa fig sauce (Karim Lakhani and David Deshaies, New York, USA) and fresh strawberries, figs, guava, blackcurrant with vanilla and violet (Pierre Hermé Paris, France).
To continue the tasting experience, Le Royal Monceau, Raffles Paris also offers a pop-up Suite, inspired by the Dom Pérignon Champagne universe, in one of its luxurious Signature Suites designed by Philippe Starck (from 3000 € per night).
