MCLEAN, Va. – 2012-11-13 — /travelprnews.com/ — Härth restaurant is excited to launch their new menu with dishes and specialty drinks that showcase farm fresh ingredients from Virginia. Executive Chef Thomas Elder continues to emphasize the utilization of sustainable ingredients, putting quality and freshness at the forefront. Harvesting honey from his four rooftop hives as well as herbs and produce from his on-site garden, Chef Elder mixes his own harvested flavors with those found in the Virginia countryside.
With Thanksgiving around the corner, dishes such as the acorn squash agnolotti made with lemon ricotta, walnuts, dried figs, tossed in a sage brown butter make an appearance on the lunch menu, along with hearty dishes like the braised lamb shoulder sandwich served on ciabatta with a goat cheese and marinated red onion and the fig and gorgonzola flatbread topped with prosciutto.
On the dinner menu, enjoy small plates like house-made fresh ricotta served on top of peasant bread and drizzled with extra virgin olive oil and tomato sauce, and main plates such as the pan seared Virginia flounder with sautéed vegetables, capers, and brown butter. For sides, Chef Elder introduces herbed spaetzle made by hand.
However, it is Chef Elder’s sweet creations which will transport any guest to the time of their youth. His upscale version of s’mores deconstructed with in-house smoked orange chocolate ganache, house-made marshmallow fluff, toasted coconut, caramel sauce, and graham crackers, allows the guests to pick and choose unique toppings to create their perfect dessert. Also making a debut is the bacon and egg zeppole, fried sweet dough filled with pastry cream, bacon jam, roof-top honey, served with an affogato-a scoop of ice cream topped with a shot of espresso.
Not only will new dishes taste of fall, but drinks like the Irish Apple with Jameson Irish whisky, muddled apples from Crown Orchard, Virginia, fresh lemon, and caramel make the ideal accompaniment sitting on a patio watching the seasons change. Also, Old Square with Bulleit rye whiskey, Hennessey cognac, with a touch sweet vermouth, a B&B rinse, and Bitterman’s and Pechauds bitters.
