A contemporary take on the classic mountainside tavern, Braidwood’s warm and welcoming atmosphere captures the lively charm of Whistler. Inspired by British Columbia’s seasonal bounty, celebrated chef and restaurateur Richard Sandoval presents shareable American favourites created with the highest quality, locally sourced produce. The menu is paired with a hand-picked selection of rotating seasonal craft beers, highlighting the best micro-breweries across the Sea-to-Sky region. Large communal tables and an open layout allow for friends to gather while keeping mind of physical distance. Located steps from the world-renowned ski hills, Braidwood is a destination for guests and locals alike – to share elevated public house dishes, and recap the day’s adventures with another round.
“Food to me is a very social experience, and at Braidwood, our emphasis is on re-energising familiar dishes and presenting them in a way that creates community and social connection – sharing with those around you,” says Richard Sandoval, CEO and Founder of the global Richard Sandoval Hospitality group. “Whistler’s culinary scene is very unique and vibrant, and we’re excited to create a modern update on a classic food styling.”
Braidwood’s menu highlights include the green chile burger, made from Canadian-raised grass-fed beef and topped with roasted poblano pimento cheese; local Brohm Lake duckling carnitas poutine with poached duck egg; and local elk salami and arugula pizza with Calabrian chiles. The cocktail program features playful cocktails such as the Chai Mezcalita, crafted with mezcal, tequila blanco, in-house made apple chia syrup, and a dash of locally-made juniper citrus bitters. An extensive, hyper-local craft beer program features a dynamic range of inventive taps including funky sours, crisp pilsners, and juicy IPAs.
In step with Chef Sandoval’s culinary vision, Vancouver-based studio Box Interior Design delivers a welcoming and chic design aesthetic, invoking the warmth of your favourite uncle’s cabin. The space is wrapped in dramatic braided wood-panelling, made from woven reclaimed pine, cedar, and spruce and is the namesake feature of the restaurant.
“The elements have age, have place,” say Box Interior Design founding Principals Jay Brooks and Cynthia Penner. “Using indigenous and reclaimed woods such as fir and cedar, and natural textiles such as wool, gives a feeling of authenticity and integrity.” The interior design picks up on cabin vocabulary – timber cladding, stone hearths, warm light – without ever being literal.
Additionally, a rotating roster of local artists, curated by Whistler Contemporary Art, showcases work from the region’s rich artistic community.
Tucked into the centrepiece soapstone bar are supple leather barstools. Tufted leather booths and national park-inspired wood dining tables inspire casual ease and comfort.
