Miami, U.S.A. – August 10, 2012 Miami foodies rejoice in August and September when Miami Spice, the city’s popular restaurant promotion, takes place. During the two months diners enjoy specially priced three-course meals at top restaurants. Edge, Steak and Bar, the hip new restaurant atFour Seasons Hotel Miami, is offering delectable Miami Spice menus daily throughout the promotion.

Dinner

Starters

  • Gazpacho: peach and tomato gazpacho, blue crab, California olive oil, ghost pepper
  • Egg: Lake Meadow Naturals egg, cheesy grits, chorizo, snap peas and sprouts
  • Tartare: corvina tartare, green apple, celery leaf, cilantro, yellow pepper sauce

Mains

  • Snapper: pan seared Florida snapper, charred zucchini salad, mussel vinaigrette, saffron
  • Ribs: mesquite smoked ribs, chipotle coleslaw, skillet potatoes, bread and butter pickles
  • Beef: Creekstone Farms butcher’s filet, roasted carrots, red onion chutney, black pepper jus
  • Chicken: grilled half all natural chicken, brioche and fennel puree, olive salsa, watercress

Desserts

  • Chocolate: hot chocolate mousse, butterscotch custard, bananas, salted peanut brownie
  • Pannacotta: yogurt pannacotta, passion fruit sorbet, tropical fruits, vanilla meringue

  • Watercress salad: green cress, Turtle Creek Farm goat cheese, shaved fennel, fried dates

  • Edge Burger: Creekstone Farms ground beef, Vermont cheddar, house cut fries
  • Chicken: flame grilled chicken, bread salad, picholine olives, roasted tomato sauce
  • Snapper: Florida snapper, mussel and white bean “minestrone,” Marcona almond pesto

Desserts

  • Shake and Bake: banana and dulce de leche shake, chocolate chunk cookie
  • Fruit and Nuts: watermelon salad, coconut sorbet, pine nut granola, mint
