As Burj Al Arab continues to raise the bar in elevated dining experiences in Dubai; Al Muntaha reveals a new menu to take guests on a gastronomic journey of fine French cuisine bursting with seasonal produce, the finest of ingredients and respect for the art of classic French culinary styles. This unique addition to the dining scene, perched high on the 27th floor of the iconic hotel, has been curated by Chef Francky Semblat.
A protégé of the famous chef Joël Robuchon, Chef Francky has more than 23 years of experience at some of the world’s most celebrated restaurants from Paris to Shanghai and Macau. Having established these restaurants as gastronomic destinations in their own right, and facilitated the achievement of multiple Michelin stars for each, his reputation for classic French style and commitment to deliver extraordinary food is known and appreciated by epicureans around the globe. Chef Francky has been warmly welcomed among the next generation of culinary talent to support Burj Al Arab’s never-ending quest to deliver an unforgettable dining experience.
Guests will commence their exceptional Al Muntaha journey by choosing from a selection of indulgent appetisers including foie gras grilled and served with glazed cherries and fresh almonds, fine green pea and mint velouté on a sweet onion emulsion, and king crab with Amalfi lemon, caviar and yuzu sour cream.
Following this, guests can savour a superb selection of fish, meat and vegetarian dishes, expertly sourced from around the globe. To name just a few of the options to anticipate: silky Maine Lobster with a delicate saffron couscous and “Bouillabaisse” emulsion, Australian Wagyu Sirloin with a duck confit potato and glazed shallot and capsicum relish, and White Cod miso from the deep seas of Patagonia, served with a pepper sauce and seasonal white asparagus.
For a sweet finale, diners can enjoy delicious desserts such as Baba with red currant, ginger broth and jasmine cream or confit Strawberry with a light meringue, basil cress and sorbet.
Open for lunch and dinner, Al Muntaha restaurant offers à la carte dining for all guests. For those looking for the full French experience, degustation menus are available from AED 650 per person for five courses or AED 890 for seven courses.
