Seoul, Korea, 2017-Apr-21 — /Travel PR News/ — Four Seasons Hotel Seoul announces the appointment of Ciro Petrone as the new Chef de Cuisine of the Hotel’s stylish Italian restaurant Boccalino, where he will oversee and lead the culinary operations. A seasoned Chef with 20 years of experience in Italy and around the world, Chef Petrone will drive the Boccalino team to new heights bringing authentic Italian flavours and beautifully plated dishes to local and international diners in Seoul.
Chef Petrone began his career as a junior chef in catering and banqueting before joining luxury hotel restaurants – many of them Michelin-starred. Chef Petrone is joining Boccalino after spending the last four years at the helm of the one Michelin star restaurant Tosca at Ritz Carlton Hong Kong preceded by Romeo Hotel in Naples, Excelsior Vittoria in Sorrento, Palazzo Sasso in Amalfi Coast and Park Hyatt in Milan.
Growing up in Naples, “the city of the sun and the sea” on the southwest coast of Italy, Chef Petrone was drawn to the kitchen watching his mother cook pasta and seafood for the family. Those early days inspired his own style of cooking reimagining rustic Italian dishes in a modern way but with flavours his mama used to make.
Chef Petrone is brimming with a desire for Boccalino to be the best Italian restaurant in Seoul. “I want our guests to leave happy, the tastes to be the same through all bites and the presentations as enjoyable for the eyes as for the mouth. The tastes and quality of my food are the same, but the presentation matches the look of the restaurant — simpler, more colourful and playful, almost like the ingredients are in motion on the plate. I want to give our Korean guests something they haven’t experienced before.”

Reflecting the dynamic fashion and design culture of modern Milan, Boccalino is the stylish Italian restaurant located on the second floor of Four Seasons Hotel Seoul. Light pours in through the floor-to-ceiling windows during the day and the open kitchen is a hive of activity, allowing guests to enjoy the showmanship of the chefs as they craft contemporary renditions of classic Italian dishes. Boccalino serves lunch and dinner and can seat 166 guests with three private dining rooms that can accommodate up to 12 guests.
