Zuma will open its first Saint-Barth restaurant in Gustavia on 25 November 2026, bringing the brand’s contemporary Japanese izakaya format to the island for a winter season that will run through April 2027.

The new restaurant will occupy 19 Rue de la République overlooking Gustavia harbour, placing it in the centre of one of Saint-Barthélemy’s busiest dining and social districts. Zuma says the restaurant will open seven nights a week from 6:00 p.m. to 1:00 a.m., with reservations already available through its official booking page.

The seasonal opening adds a new international name to Gustavia’s winter dining circuit at the point when the island moves into its busiest visitor period. The official Saint-Barth tourism guide describes Gustavia as the centre of island life, with its harbour, restaurants and shops forming the core of the capital’s visitor experience.

Harbour views shape the Saint-Barth concept

The Saint-Barth restaurant has been designed around the waterfront setting, with predominantly indoor seating and a semi-outdoor area providing high-top seats for drinks and views across the harbour.

Renderings released with the announcement show a warm timber-led interior opening onto the water, with round dining tables, green upholstered seating and an elevated view over yachts and the lights of Gustavia. The layout is intended to carry guests from sunset drinks into dinner and then later-night service without changing venues.

That transition is central to the operating model. As the evening progresses, the focus will increasingly move toward the bar and resident DJ, with a high-top counter around the DJ area creating a more social late-night zone.

Three kitchens will anchor the menu

The food programme follows Zuma’s established three-kitchen format, combining a main kitchen, sushi counter and robata grill. Dishes are designed for sharing and draw on Japanese techniques interpreted through the brand’s modern izakaya approach.

The drinks list will cover signature cocktails, wine and premium sake, giving the Saint-Barth venue a dining-to-late-night format rather than operating solely as a restaurant.

Sven Koch, CEO of Azumi Restaurant Group, said Saint-Barth had long felt like a natural fit for Zuma because of the island’s combination of food, drinks, music and social energy. The company is positioning the opening as both a restaurant launch and a new seasonal gathering place for the island’s international winter crowd.

A late-November opening for the winter season

Zuma’s official Saint-Barth page now confirms an opening date of 25 November, narrowing the earlier “late November” timetable announced for the project.

The timing puts the launch immediately after several major November events on the island. Saint-Barth’s tourism calendar includes Art Week from 13 to 19 November and the St Barth Cata Cup from 18 to 22 November, followed by the build-up to the December festive season and New Year period.

For restaurants in Gustavia, winter is the key trading season. Many venues close for part of the late-summer and early-autumn low season before reopening from October onward, with the island’s dining and nightlife scene rebuilding toward its peak between late November and the first months of the new year.

Zuma continues to use seasonal destinations as part of its global growth

The Saint-Barth opening extends a model Zuma already uses in resort markets where demand is concentrated around a particular season. Alongside permanent restaurants in cities including London, Dubai, Hong Kong, Miami, New York, Rome, Madrid and Bangkok, the brand also operates seasonal or pop-up locations in destinations such as Mykonos, Saint-Tropez, Porto Cervo, Capri, Kitzbühel and Gstaad.

In 2026, Zuma has also expanded its permanent footprint with openings including Vail and San Diego, while Saint-Barth adds a Caribbean location to the portfolio for the first time.

The Gustavia restaurant will operate through April 2027, after which its seasonal timetable will follow the island’s winter pattern. Zuma has not announced whether the Saint-Barth location will return for the 2027-28 season.

Reservations and current opening information are available through the Zuma Saint-Barth website.
