Executive Chef Andrew Cooper’s farmer’s market finds inspire tasting menus

Santa Fe, U.S.A. – 2012-11-05 — /travelprnews.com/ — A weekly pilgrimage to the farmer’s market in downtown Santa Fe provides inspiration for Executive Chef Andrew Cooper’s Saturday Market Menu in Terra, highlighting “of the moment” produce and locally-raised meats at the new Four Seasons Resort Rancho Encantado Santa Fe.

“My goal is to make the Market Menu, and the entire Terra menu, as sustainable as possible,” says Chef Cooper. “Regional, seasonal and modern are key words when defining Terra’s cuisine. My passion is infusing the flavour of a destination into my food, and supporting local farmers is a natural step toward getting acclimated and acquainted to the local food culture.”

With his two-year-old son in tow, Chef Cooper combs through the week’s bounty at the farmer’s market with a careful eye. He heads to Pollo Real for fresh organic chicken and eggs. The Old Windmill Dairy supplies goat cheese he crafts into a savoury charcuterie platter, while a sweet preparation awaits dessert fans in the form of a goat milk cheesecake. Chef Cooper scoops up local piñon to create a fresh pesto, which he blends into hand-pulled mozzarella.

Guests can enjoy Chef Cooper’s Market Menu options every Saturday in Terra, choosing between a three-course menu for USD 55.00, a five-course menu for USD 85.00 and an eight-course menu for USD 125.00. Wine pairings are available for an additional cost.

Chef Cooper has future plans to enhance his on-property herb and vegetable garden with seasonal offerings this spring, as well as introduce a bee farm in conjunction with a local farmer. Other enhancements include adding tables and a grill to the garden area, so that guests may dine al fresco and have a bird’s eye view of the chefs at work.

With more than 20 years of experience around the globe, Chef Cooper’s diverse resume includes a wealth of culinary expertise in a variety of cuisine styles. A graduate of the esteemed Culinary Institute of America, Cooper brings more than 12 years ofFour Seasons experience to his new role as Executive Chef atFour Seasons Resort Rancho Encantado.

Terra diners enjoy organic, locally sourced ingredients and majestic views of the surrounding beauty of northern New Mexico.
