Shang-High at Jumeirah Himalayas Hotel in Shanghai retains Michelin star status for three years running

Hong Kong, 2018-Oct-18 — /Travel PR News/ — The international gourmet world feasted their eyes on Jumeirah Himalayas Hotel in Shanghai whose restaurant Shang-High retained its Michelin star status for three years running.

After the announcement of the MICHELIN guide Shanghai 2019, a gala dinner was held at Jumeirah Himalayas Hotel. The two-day celebration featured immersive culinary experiences with the some of the best chefs in the world showcasing their gastronomic delights. Four specially-chosen teams of Shanghainese chefs, featuring executive Chef Frank Hu from Shang-High, cooked scrumptious, locally-inspired dishes for guests. Renowned chefs from around the world also contributed including celebrated Chef Alvin Leung from Hong Kong, whose restaurant has been awarded three Michelin stars for three years running.

This was not the first time that Shang-High served guests of a Michelin gala event. Chef Hu was one of the five chosen chefs for the ceremony in 2017. As host this year, Shang-High presented the first main course of the night, offering a perfect blend of Chinese and Western culinary tastes while honouring local flavours.

The star dish served to the 400 guests by Chef Hu was Murray cod served with a crab dressing and parma ham – the Murray cod is an exquisite ingredient, almost impossible to be found on the market. In order to capture the Murray cod’s freshness and to highlight the authentic flavours of the dish, Chef Hu steamed the fish – a longstanding technique of traditional Chinese cooking.

He then incorporated the crab, currently in its high season in Shanghai, by skillfully sautéeing and sweating the meat, and filtering any impurities to transform the delicate flesh into a savoury consommé. Reigning in the natural orange tones, the dish was elevated by the dash of aroma and flavour brought by the much-beloved crab meat, highly popular among the Chinese. After some skillful slicing, the fish, tightly wrapped in a cocoon of fresh vegetables, was placed in a steaming cabinet at a specific temperature level to ensure its original texture and moisture was retained. With these simple, yet highly-detailed steps in his cooking, Chef Hu demonstrated his years of experience and passion for ingredients.
