Hotel Maya presents new monthly Latin Brunch Series in Fuego for 2013

Executive Chef Victor Juarez takes guests on a culinary trip through Latin America, first stop Mexico

LONG BEACH, Calif., 2013-01-14 — /travelprnews.com/ — Fuego guests can now tour Latin America without ever leaving Long Beach as Executive Chef Victor Juarez presents the new Latin Brunch Series – first stop Mexico on Sunday, Jan. 20 from 11 a.m. to 2 p.m.

The Latin America culinary tour continues to El Salvador on February 17, Costa Rica on March 24, Colombia on April 21, Guatemala on May 19, Argentina on June 23, Brazil on July 21, Cuba on August 18, Peru on September 22, Chile on October 20, Nicaragua on November 10, and Venezuela on December 15.

Live Latin music will accompany each Latin Brunch. Fuego will also feature food specials throughout the month for each Latin American country.

Executive Chef Juarez’s Mexico tour stop begins with sensational Soups and Salads to include Pozole a Homini Pork Stew; Roasted Beet Salad with Peppers Escabeche, Cotija Cheese and Pepitas; Chipotle Caesar Salad; Butternut Squash; Sweet Potato Salad; Cheese and Charcuterie Display; Smoked Salmon and Accompaniments; and Sliced Fresh Fruit Platter.

Fuego guests will then enjoy Ceviche Fuego with Shrimp Chipotle Ceviche, Mahi Mahi Sweet Onion Pickled, Orange and Papaya.

The Fuego Taco Fiesta features a fresh selection of Cilantro Jalapeno Grilled Skirt Steak, Tequila Lime Chicken and Seafood Tacos, along with Shredded Beef Tamale with Salsa Roja, Tortilla Azteca, Mini Quesadillas, and fresh homemade salsas.

The Mexico Brunch entrée is a la carte, ordered through the server and includes one selection of Steak Adobado with grilled filet mignon, adobado sauce, fried flour tortilla, sautéed Anaheim chiles and onions and salsa fresca; Machaca & Eggs with shredded beef, over easy eggs, roasted garlic chile de arbol salsa, Mexican red rice, guacamole and cream; Chilaquiles with fried corn tortilla, scrambled eggs, salsa ranchera, guacamole, jalapeno cream, and refried pinto beans; Citrus Braised Pork Carnitas with fried pork carnitas, red pasilla tomato sauce, green onions, refried beans, Mexican red rice, and mini corn tortillas; Chile Rellenos with tempura stuffed poblano pepper with four cheeses, fire roasted tomato sauce, cilantro green rice, and refried beans; Huachinango “Veracruzana Style” with pan seared red snapper, peppers, onions, capers, potatoes, tomatoes, and herbed tomato sauce; Drunken Chicken Mole with poached chicken breast, chocolate mole negro, steamed rice, pepper escabeche, chayote and carrots; or Grilled Lobster Tail with a 12-ounce lobster tail, butter lemon garlic sauce, cilantro green rice, refried black beans (Grilled Lobster Tail incudes a $10 supplement).

Delicious Desserts include an assortment of Mini Breakfast Pastries, Mexican Wedding Cookies, Chocolate Tres Leches Cake, Cup Cakes, Coconut Rum Flan and Caramel Sauce, along with Assorted Mini Cakes, Vanilla Raisin Bread Pudding Cinnamon-Sugar Churros with Cajeta Caramel Sauce and Chocolate Fondue.

The Latin Brunch Series – Mexico costs $33.00 per adult and children, 13 and older; $16.50 for children, 12 and under; plus tax and gratuity. An 18 percent gratuity will be added to parties of six or more.
