Brown’s Hotel, a Rocco Forte Hotel announces an exciting and unique residency pop-up with renowned Japanese chef, Daisuke Hayashi

LONDON, UK, 2020-Jan-14 — /Travel PR News/ — From Tuesday 28 January to Saturday 08 February 2020, Brown’s Hotel, a Rocco Forte Hotel, is delighted to announce an exciting and unique residency pop-up with renowned Japanese chef, Daisuke Hayashi in its oak-panelled Drawing Room.

Chef Daisuke Hayashi runs celebrated restaurant, Kikunoi Hunton in Kyoto which revels Kaiseki or kaiseki-ryōri cooking – a traditional multi-course Japanese style of dining, marked by its unique dishes featuring fresh, seasonal produce. Ahead of the opening of his new restaurant, Roketsu, scheduled to launch in spring 2020 in Mayfair, Chef Hayashi will be showcasing his forthcoming restaurant at Brown’s, recreating a traditional Japanese Tea House in one of London’s most famous tea destinations.

Chef Hayashi is one of the only masters of the Kaiseki tradition globally, and the first to bring this spectacular form of Japanese cuisine to London. Having trained at the renowned Kikunoi Ryotei restaurant in Kyoto from the age of eighteen, Chef Hayashi is now at the forefront of the next generation of Japanese chefs applying a modern, progressive approach to this revered gastronomic culture.

The residency’s dining experience at Brown’s will be intimate and exclusive in nature, with only ten seats available. Each evening guests will be treated to an elevated tasting menu created by Chef Hayashi as part of a dynamic dining experience, which includes witnessing the chef finishing the dishes
before them.

Set over eight courses, this exclusive tasting menu takes you on a culinary journey of Kaiseki cuisine and includes the below. The dinner culminates with an organic, stone milled, single-varietal matcha tea to finish off the evening. A full drinks selection will be available, including sake and Japanese beers:

Sakizuke, an appetiser similar to a French amuse bouche Hassun, this sets the seasonal theme, typically one kind of sushi and several smaller side dishes Mukōzuke, a sliced dish of seasonal sashimi Futamono, a “lidded dish”; typically a steamed dish with soup Hiyashi Takiawase, made of assorted simmered vegetables and fish Shiizakana, a substantial main dish, such as a hot pot Gohan Tomewan, a cooked rice dish with seasonal ingredients and a soup Mizumono, a seasonal dessert; may be fruit, confection, ice cream, or cake

Brown’s is a British institution that has always celebrated fine dining and nurtured world-class talent. As London’s first hotel, its historic Drawing Room and world-renowned afternoon tea complement the design of Roketsu which will transform a small section of Mayfair into a traditional Japanese tea room steeped in heritage.

The pop-up residency will take place in The Drawing Room of Brown’s Hotel from 28 January until 08 February, excluding Sunday 03 and Monday 04 February.
